This apple cinnamon oatmeal cake is the perfect fall dessert, making the house smell absolutely wonderful while baking. And this apple cake tastes even more delicious than it smells! So read on for the tasty recipe. 

Apple Oatmeal Cake

When it comes to fall, there are two types of desserts – pumpkin or apple. And I have to admit, I find it hard to choose! Around our house, everyone loves both! My chocolate chip pumpkin bars are one of the most popular recipes on the site, pumpkin pie trifle is SO good, and these caramel frosting pumpkin cookies always get rave reviews. But, I also LOVE a good apple and cinnamon combination. There is something about those flavors that are just perfect!And this apple cinnamon cake is pretty perfect that way. It’s made with those delicious apple cinnamon flavors and has a dense cakey texture. It’s also very filling with a rich flavor, thanks to the oatmeal in the batter! Oatmeal thickens the cake up and gives it that more dense texture after it cooks. And oatmeal makes it totally acceptable to have cake for breakfast, right?! Totally! 

Apple Cinnamon Oatmeal Squares

Even though this is an apple cinnamon cake, I typically slice this cake into squares. So it’s more like apple cinnamon oatmeal bars. So that not only makes these apple cinnamon oatmeal squares a great dessert, but they are also perfect for a sweet breakfast cake or an after school snack. We certainly are game for snacking on this apple slice cake anytime! 
Yum!! So good! I really love the oatmeal in this (we also really love oatmeal muffins). But in addition to the oatmeal, I also love the chunks of fresh apples in this cake. Now really, any apples will work in this recipe, but I recommend using a good baking apple. My favorite baking apples to use are Fuji, Gala, Honeycrisp, Pink Lady, and/or Granny Smith. If you’d like a little more tartness to the cake, Granny Smith is best. Or for more sweetness, Honeycrisp or Pink lady are my favorite. But again, really you can do any apples you have on hand to keep it easy! 

How to Make Apple Cinnamon Cake

In addition to the oats and the apples, the ingredients are pretty straightforward and likely all things you have on hand already (butter, flour, cinnamon, baking powder, salt, brown sugar, eggs, vanilla extract, powdered sugar, etc). Once you have gathered all your ingredients, you’ll want to grab a mixing bowl, mixing spoon, measuring cups, baking dish and parchment paper. The parchment paper will allow this cake to slip out of the baking dish easily. Trust me – you don’t want to lose a crumb of this cake!

Start putting everything together by creaming the butter and the brown sugar until light and fluffy. You can do this with a whisk, but I prefer using a hand held mixer or a stand mixer. Add in the eggs and the vanilla extract and mix well.
 Then you’ll add in the dry ingredients (flour, rolled oats, baking powder, cinnamon and salt) to your creamed butter mixture. I suggest using your mixing spoon here since the batter will become quite thick. Mix until everything is combined, scrapping the bottom and sides of the bowl. 
 Last, add in your chopped and peeled apples to the apple cake batter. Stir to combine everything and then pour it into your prepared baking dish. Bake for 30-35 minutes or until golden brown and the center is set. Remove, allow to cool slightly and dust with powdered sugar. Once cooled completely you will want to slice your apple cinnamon cake into 12 squares.

Apple Cinnamon Oatmeal Cake

Ingredients

  • 1 C butter
  • 2 ½ C all-purpose flour
  • ½ C rolled oats
  • 1 ½ tsp ground cinnamon
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 ½ cups brown sugar
  • 2 large eggs
  • 2 tsp pure vanilla extract
  • 2 C peeled and chopped apple
  • 1-2 TBSP powdered sugar

Instructions

  • Preheat the oven to 350F.
  • Line an 11x7 inch baking pan with parchment paper and set aside.
  • In a large bowl cream the butter and brown sugar until light and fluffy.
  • Add the eggs and vanilla and beat well.
  • Add the flour, rolled oats, baking powder, cinnamon and salt to the creamed mixture and beat to
  • combine. The batter will be quite thick.
  • Stir in the apples.
  • Spread batter evenly in the prepared pan.
  • Bake for 30 to 35 minutes until golden brown and center is almost firm.
  • Allow pan to cool completely on a wire rack. Dust top with powdered sugar.
  • When cooled, lift the squares out with the parchment paper and cut into 12 equal squares.
