Good company, I know. All baby company is good company. Trying to entertain while welcoming a new baby isn’t easy, though.
I’m Becca from Our Crazy Boys and though I don’t know about having three boys, like the amazing Sara, I do know about welcoming two boys into the family and the (good) stresses that could come with it.
When I was thinking about a guest post for Sara, I wanted something that would help take some of the stress out of entertaining at this busy time – what better way to help than an easy recipe that makes people say “wow!” every time they eat it?
Lemon Chicken, Garlic Green Beans, and Grilled Veggies
Prep time: 10 minutes Cook time: 20 minutes
Lemon Chicken – 2 ingredients
Lemon pepper seasoning is the only ingredient here besides the chicken. For homemade seasoning, zest one lemon per chicken breast and add 1t ground pepper and 1/4 t salt. Personally, my favorite lemon pepper is the one I order from Santa Cruz Chili Company; Lemon Pepper with salt.
I put the chicken and seasoning in a Ziploc bag in the refrigerator about an hour before we grill it, but it’s also ok to season it in the morning or right before you grill.
Garlic Green Beans – 3 ingredients
Green beans
4T Butter
2-3 cloves of garlic per ½ pound of green beans
In a deep sided pan, sauté green beans with garlic and butter on low for 10-15 minutes.
Grilled Veggies – One ingredient in addition to your veggies.
Our favorite veggies to slice up are orange and yellow peppers, onions, and mushrooms. Toss in some olive oil and throw them in a grill basket for 15-20 minutes on medium temperature, tossing every 5 minutes or so.
Of course, if you prefer to bake your chicken and sauté all of your veggies, I bet the meal would have the same effect. The flavors go well together and the short list of ingredients makes it an easy meal to prepare when you’re short on time.
I hope this recipe helps you out in a pinch or leads to some recipe creating of your own. I think my yummiest recipes come from swapping ingredients when I run out of something!
