Perfect for a cold pick-me-up any time of the day, these caramel mocha popsicles are SO good and easy to make! The summer has been filled with swim team practices, playdates with friends, and some super fun family trips. And soon, we’re gearing up for school with back-to-school shopping, “meet the teacher” nights, school activities resuming, and more! So, I’m all about looking for convenient shortcuts and making things easier when possible. Caramel Mocha Popsicles

Now, let me just say that photographing popsicles in 110+ degree heat in Arizona is NO easy feat! So, even if these frozen pops don’t look like anything special in the photos, know that the taste is FABULOUS! I mean, can you really go wrong with coffee popsicles?! All the flavors of a delicious iced coffee drink in one tasty frozen treat! They are SO good! And they’re really easy to make too! You’ll start with a bottle or two of the Shamrock Farms Mocha Cold Brew Coffee and Milk (depending on how many popsicles you’d like to make). Then, you’ll add a few extras, like caramel sauce and chocolate chips, to make a delicious frozen treat. YUM! The hardest part of this is just waiting for everything to freeze! Making Coffee PopsiclesYou can see I left a little space there when filling the popsicle molds! That’s to leave room for some chocolate chips and chocolate syrup! So, I froze the pops for about two hours. Then, I pulled them out and added mini chocolate chips and chocolate syrup mixed with a little more Cold Brew Coffee & Milk. This kept the chocolate chips from just all settling at the very top tip of the popsicles. If you want them all at the bottom instead, you can wait a few more hours until the rest is more frozen through. Really, you can’t go wrong no matter where the chocolate chips end up!  Caramel Mocha Iced Coffee Pops

Caramel Mocha Cold Brew Popsicles

Perfect for a old pick-me-up any time of the day, these caramel mocha popsicles are SO good and easy to make!

Ingredients

  • 2 bottles of Shamrock Farms Mocha Cold Brew Coffee & Milk
  • 2 TBSP Caramel Sauce
  • 1 TBSP Chocolate Sauce
  • 1 TBSP Mini Chocolate Chips

Instructions

  • In a mixing bowl, combine the Mocha Cold Brew Coffee & Milk and the caramel sauce. Stir until sauce is combined with the coffee.
  • Fill each popsicle mold approximately 3/4 of the way up with the mixture.
  • Insert sticks/attach lid and freeze for approximately two- three hours (until popsicles have started to freeze).
  • Combine the rest of the Cold Brew Coffee & Milk with 1 TBSP Chocolate Sauce.
  • Remove the popsicles from the freezer. Sprinkle mini chocolate chips into each popsicle well. If desired, add a little drizzle of caramel sauce over the chocolate chips. Then top off each well with the coffee & chocolate mixture.
  • Return to the freezer for another 3-4 hours (or ideally overnight) until frozen through.
  • Enjoy!
