Broccoli & Cheese Casserole with Knorr Homestyle Stock #NewKnorrStock

When I do chicken bulk cooking, I love making homemade stock. But, I often run out before making more. So, I always like to make sure I have some on hand in the pantry also. And, there’s something new on the market for that very purpose…

Knorr Homestyle Stock

This stock comes condensed in little tubs–each of which makes about 3.5 cups of broth! So, it’s definitely a space saver and something easy to have on hand. To test out the new stock, I browsed through Knorr’s Online Recipe Library.

They’re were quite a few recipes that sound great, but when I saw the Broccoli & Cheese Casserole, I knew that’s what I wanted to try. One of my husband’s favorite dishes from growing up was “Broccoli Cheese Rice”, so I thought we’d give this new one a try and see how it compares!

Broccoli & Cheese Casserole

*Recipe adapted from Knorr

Ingredients

2 Tbsp. butter
1 C onion, chopped
2 Tbsp. all-purpose flour
1-1/2 cups milk (I used 1%)
1 tub Knorr® Homestyle Stock – Chicken
1-1/2 cups shredded cheddar cheese, divided
8 cups frozen broccoli and cauliflower florets
1 Tbsp. Dijon mustard

Directions

– Preheat oven to 350°. Spray 2-quart baking dish with nonstick cooking spray; set aside

– Melt butter in  sauce pot over medium-high heat and cook onion, stirring frequently.– Reduce heat to medium, then stir in flour and cook, stirring constantly. Gradually stir in milk. Bring to a boil over high heat. Stir in Knorr® Homestyle Stock (Chicken) and boil until stock is melted and sauce is thickened (about 2 minutes).

Remove from heat, then stir in mustard & 1 cup cheese. Combine with the broccoli & cauliflower in prepared dish.

Bake 20 minutes. Top with remaining 1/2 cup cheese. Then, bake an additional 5 minutes or until cheese is melted.

The verdict?!

Super flavorful! I love the addition of the stock and the dijon mustard! Bu for us, there was a little too much sauce compared to veggies. So, next time I make this, I think I might add a little more vegetables, or even mix some chicken or rice in! With that said though, I am definitely making this recipe again as the flavor is GREAT! In fact, I think this would be perfect for a freezer cooking/make ahead dish. To do that, just make a BIG batch of the sauce then, divide and mix into baking safe pans with the broccoli; then freeze. You can then pull one out of the freezer when you want it and bake! 🙂

  1. This reminds me of growing up, my mum used to dish up broccoli and cheese a lot … I would never have eaten broccoli back then without cheese :). This looks delicious and sounds easy to make.
