A delicious fall breakfast made while you sleep? You can have exactly that with this super tasty pumpkin spice overnight oatmeal!

It is SO amazing to have a hot breakfast ready the second you wake up! Really, it’s like one of the best things ever! The plain variety is great (so you can add in any toppings you like). But, flavored versions can be fabulous too. And this pumpkin spice version is great for the entire fall season! In fact, I think this would even be a great recipe idea for Thanksgiving morning – it’s ready with no morning prep (giving you energy and allowing you more time to get ready for the Thanksgiving festivities) and it is definitely reminiscent of pumpkin pie. YUM! Pumpkin Pie Overnight OatmealNow, while this cooks (and when you take the lid off in the morning), the appearance is NOT the prettiest. DO not be worried and don’t let that deter you!! The taste is fabulous – pumpkin pie oatmeal! YUM! I’m showing you the quick phone photo I took (right after taking the lid off, in terrible light, before there was much sunlight in our kitchen) just so you can see what you might wake up to. Again don’t fret! Just stir! slow-cooker-pumpkin-oatsEven though it doesn’t look pretty, it’s delish and it’s just SO stinkin’ easy. Just dump all your ingredients in the crock pot, set it to low, and go to bed. Then 6-8 hours later, you’ll wake up to some a delicious breakfast. Just stir the contents to mix everything together well and then serve up with your favorite add-ins. It’s THAT easy! Here’s the recipe:

Slow Cooker Pumpkin Spice Overnight Oatmeal

All the flavors of pumpkin pie, in a delicious breakfast oatmeal that cooks while you sleep!

Ingredients

  • 2 cups steel cut oats
  • 4 cups water
  • 2 cups milk
  • 1 15 ounce can of pumpkin puree (not pie filling)
  • 1 TBSP pumpkin pie spice
  • 1 TBSP pure vanilla extract
  • 1/2 tsp pinch of salt
  • 1/4 - 1/2 C brown sugar

Instructions

  • Place all the ingredients in a large slow cooker, stir, set to low and cook for 6-8 hours.
  • Stir the oatmeal mixture well and serve. Add additional add-ins for desired consistency (add milk), desired sweetness (add more brown sugar or pure maple syrup), and desired flavor (you could add in chopped pecans, raisins, dried cranberries, cinnamon, etc).

Notes

A few notes:
- Steel cut oats really are the only oats recommended for this recipe
- You do NOT have to use milk, you can substitute the milk for water if desired
