So, how about having some of the flavors of paradise at home?! This coconut lime chicken is perfect for that. You can just throw everything in the crock pot for a seriously easy dinner! The chicken ends up so tender with a nice mild, just hint of sweet flavor. You can serve it over rice for a delicious paradise-inspired meal!

So, just before serving up the coconut lime chicken from the slow cooker, you can quickly cook up the rice. Then, serve immediately. So easy & hardly any time spent in the kitchen! For even more flavor, you could serve it up with a little mango or pineapple. YUM!! Here’s the super easy recipe:
Slow Cooker Coconut Lime Chicken
Ingredients
- 2-3 lbs boneless chicken breasts
- 1 can lite coconut milk
- juice from 2 limes about 1/4 cup
- 1 tsp garlic powder
- 2 TBSP soy sauce I use gluten free Tamari
- 1/4 tsp ginger powder
- *optional - extra lime juice & shredded coconut
Instructions
- Place chicken in the crock pot and pour all the ingredients over top.
- Cover and cook on low for 6-8 hours (or 4-5 hours on high).
- Serve over rice and garnish with thin lime slices. For extra flavor, add a squeeze of lime juice and a sprinkle of shredded coconut.

What would be some good vegetables to add to this recipe?
We serve with a side salad or I make up some broccoli. Not sure what else would be good in the crock pot with it.
