School has been in session for a few weeks here, so I’m already trying to put some variety into the kids’ lunches. I’m always looking for fun, simple, and healthy ways to vary what goes in the school lunch boxes. I prefer changing it up a bit instead of sending them with a PB&J or ham & cheese sandwich every day. So today I’m sharing one tasty, non-sandwich lunch idea with O Organics! Easy Chicken Salad

Prepping food on the weekend is one thing I like to do to make the week lunch prep go a little more smoothly. And, making a big pot of slow cooker chicken to have for easy meals during the week is one of my favorite things to make – either that or buy a rotisserie chicken. Having cooked chicken ready to go is so handy, perfect for making like this better-for-you chicken salad for great lunches! Healthier Chicken SaladThis one has O Organic grapes, celery, and is made with Greek yogurt instead of tons of mayo for the WIN! With already cooked chicken, this chicken salad comes together SO quickly and I love that it’s full of good ingredients. I adapted the recipe from Safeway, so you can check that out to compare if you like. One thing I omit is pecans because my kids just don’t care for them as much. But, add them if you like! Also, if you have smaller kids, you might consider quartering the grapes instead of just cutting them in half to avoid any potential choking hazard with the grapes. Chicken Salad WrapSUPER tasty! I love simple recipes that are made with real food & high quality ingredients. A wrap like this is great for putting in the lunch box. But, the beauty of making  a batch of the chicken salad is that then the adults have a great option for lunch at home/work. Chicken Salad Wraps

This better-for-you chicken salad is great for wraps and easy meals!

Ingredients

  • 2 cups shredded cooked chicken breast
  • 3/4 cup plain Greek yogurt
  • 1/4 cup light mayonnaise
  • 1 cup O Organic grapes sliced in half (or quarters)
  • 3/4 cup sliced O Organic celery
  • 1/4 tsp pepper
  • dash of garlic powder
  • whole wheat wraps/tortillas or lettuce leaves

Instructions

  • In a large bowl, stir all ingredients together until well-combined.
  • Place about 1/2 cup of chicken salad mixture in the center of one side of a flattened tortilla/wrap and roll the tortilla tightly around the chicken salad.
  • Slice in half and serve.
