School has been in session for a few weeks here already, so I’m constantly looking for fun, simple, and healthy ways to vary what goes in the school lunch boxes. I really don’t like the idea of sending them with a PB&J or ham & cheese sandwich everyday. We’ve got to change it up! So today I’m sharing one tasty, non-sandwich (kid approved) lunch idea with O Organics! I’ve teamed up with Safeway to share some pure & simple school lunch ideas and this chicken salad wrap is a super tasty one (and great for kids or adults)! One thing I like to do is make a big pot of slow cooker chicken (or buy a rotisserie chicken) on the weekend to have for easy meals during the week. Then, you can make things like this better-for-you chicken salad for great lunches! This one has O Organic grapes, celery, and is made with Greek yogurt instead of tons of mayo! WIN! I adapted the recipe from Safeway.
- 2 cups shredded, cooked chicken breast
- ¾ cup plain Greek yogurt
- ¼ cup light mayonnaise
- 1 cup O Organic grapes, sliced in half
- ¾ cup sliced O Organic celery
- ¼ tsp pepper
- dash of garlic powder
- whole wheat wraps/tortillas or lettuce leaves
- In a small mixing bowl, combine all ingredients.
- Place about ½ cup of chicken salad on tortilla wrap and roll. Slice and serve. Or, on lettuce leaves for lettuce wraps/boats.
SUPER tasty! I love simple recipes that are made with real food & high quality ingredients. A wrap like this is great for putting in the lunch box. But, the beauty of making a batch of the chicken salad is that then the adults have a great option for lunch at home/work. You can make yourself a wrap like this or spoon some of the chicken salad on to lettuce leaves! YUM! Fresh fruits and veggies make great sides for the lunch box, but these homemade fruit leathers looks AWESOME too!!
