I’m so excited to share this delicious loaded baked potato inspired breakfast casserole with you today as part of a sponsored partnership with Shamrock Farms. It’s a tasty and hearty way to start the day! Back-to-school season is almost upon us! And, one of the things I try to do for school prep is doing some meal planning and make ahead meals! Those back-to-school mornings can get crazy! So, I find that it’s helpful if I spend some time on the weekend doing some make ahead meals for the week. One dish that works great for this is breakfast casseroles. You can make it up on Sunday and then have a hearty option throughout the week! So this dish is perfect for back-to-school time! Not only is it easy to make it ahead and have it to serve throughout the week, but it’s power packed with ingredients to help the kids stay full until lunch. Everyone in the family loves it! The loaded baked potato breakfast casserole is a fun twist on a classic, favorite dinner idea! At our house, we typically serve up baked potatoes topped with ham, broccoli, cheese, sour cream, and maybe a few green onions or chives! This breakfast casserole has the potatoes, all those tasty toppings, plus eggs to make it a breakfast casserole! The result is tasty breakfast dish! You’ll see that there’s one bonus ingredient, cottage cheese, to make it cheesier and give a nice protein boost (since a single serving has up to 13 grams of protein)! We used cottage cheese and sour cream from Shamrock Farms. We love using Shamrock Farms products as they’re made with with pure, wholesome milk containing no added growth hormones. They’re a local company for us (Arizona family-owned) and we love supporting local! You can even take a tour of their working dairy farm here (during October – May). So, we combined potatoes with cottage cheese, sour cream, and our additional baked potato “fixings”, added eggs, and have one delicious breakfast!

Cheesy Loaded Baked Potato Breakfast Casserole

This loaded baked potato breakfast casserole is a delicious and hearty way to start the day!

Ingredients

  • 6 C shredded hash brown potatoes
  • 2-3 C diced ham *or other meat of your choice
  • 2-3 C baby broccoli florets chopped
  • 1 C cottage cheese
  • 1 C sour cream divided
  • 2 C shredded cheddar cheese divided
  • 2 TBSP green onions sliced (approx 3 green onions)
  • 1 dozen eggs
  • salt & pepper

Instructions

  • Preheat oven to 350 degrees.
  • Grease 13x9 pan, layer bottom of pan with potatoes. Season with salt & pepper. Place in oven to cook (about 10 minutes) while you prep the other ingredients.
  • In a large mixing bowl, combine ham, broccoli, cottage cheese, green onions, 1 C shredded cheese, and 1/2 C sour cream. Stir to combine.
  • Remove potatoes from the oven. Dump mixture over potatoes in pan and stir to combine mixture with potatoes.
  • In empty mixing bowl then, whisk the eggs with sour cream until well combined.
  • Pour eggs over the mixture in the pan. Let the eggs soak in to the mixture for just a minute.
  • Top with remaining shredded cheese.
  • Bake for approximately 45 minutes until eggs are cooked through.
  • Serve and enjoy!

    I make freezer meals for dinners, overnight oats for mornings and the kids get sandwiches and treats all sorted into bins for easy packing

    My favorite meals are Easy Crock Pot meals like spaghetti, macaroni and cheese, pot roast. It is so easy cooking in the Crock Pot. I have a breakfast casserole like yours that I make in the Crock pot. IT is so good!

  3. In the mornings Scrambled Egg Muffins, Lunch and dinner I always meal prep on Sundays for 3 days and again on Wednesday. It typically consists of baked chicken with veg or quinoa. Made life so much easier.

    When my son was in school, to make back to school meals easier, I used the slow cooker, doubled recipes and froze half. This was the best way to have meal time stress free!

  5. I like to do a pot roast or baked chicken. I like to make sure there are leftovers for another meal.

    On busy back to school nights, I like frozen meals. You can let them cook while you take care of other things.

  7. I love to make casseroles and stir fry because they are very quick to prepare and the casserole can be prepared ahead of time.

  8. I make a Sriracha Pasta Salad that just keeps getting better, the longer it sits in the fridge and the flavors meld. Great for multiple meals, different schedules, and for leftovers.

    During the school year, I have been known to cook and freeze sausage patties, and scrambled eggs, which can be added to a toasted english muffin for a quick breakfast.

    Cut down on breakfast mess by mixing pancake mix for the week and putting it into several freezer bags (to) store in the fridge. Be sure to leave room for the batter to expand. When ready to make, cut a bottom corner of the freezer bag and squeeze the mix into a hot pan

  14. Love to make turkey roll-ups. Sliced turkey, filled with stuffing rolled up covered in a little turkey gravy and a side of potatoes. Easy peasy.

  15. My daughter, years ago, when she was living at home and in highschool loved Chili and Lasagne. I guess I can make it in my sleep now.

  16. My favorite meals are pulled pork sliders with baked beans and baby carrots. I can make it in bulk and the pulled pork freezes great and can be used in other dishes. Also, I can swap out the beans and carrots for any number of other sides to make the dish a bit different so my kids don’t get bored!

    My favorite meals are roasted veggies with brown rice, spaghetti with ground beef, and chicken curries with coconut milk!

  21. My kids are big fans of a sandwich with fruit and other simple quick meals. So I’m very lucky in that way.

  22. Tacos are usually our go to meal on weekdays. I like that I put the meat in the slow cooker in the morning and it is ready by the afternoon, while i warm up the tortillas, my girls get the toppings ready and we have an easy and delicious meal ready in no time. Thanks for the chance to win!

    Taco and chicken enchiladas are my go to. I also have a chicken dish in the slow cooker that is super simple and tasty!

  24. I like to make ahead different kinds of soup and freeze them in individual bowls so everyone can grab a bowl and pop it in the microwave for a quick meal when we’re on the go! Baked potato, roasted veggie, chicken & dumplings.
