Making edible crafts and fun foods is one of my favorite ways to get creative. So, I was thrilled when I was asked to participate in the with Avocados From Mexico “Spring for Amazing Avocados” campaign (and was sent a fun avocado prize pack which you’ll have a chance to win at the end too). The goal? Create a unique twist for this one-of-a-kind fruit! I thought about doing a little St. Patrick’s project with it or some sort of DIY facial/hair-care treatment. But, I just couldn’t get over how these yummy avocados are shaped just like eggs. So, why not avocado Easter eggs?! Fun, right?! These yummy “eggs” are not only a unique twist on using the avocado (they use everything except the seed), but are a unique twist on my favorite avocado dish–guacamole! Mmmmmmm! To make your own delicious avocado Easter eggs (chock full of nutrients, providing nearly 20 vitamins and minerals per one ounce serving), you’ll need to start with a few Hass avocados just like you’re starting to make guacamole. Normally, I’m not very careful with the skin when taking the fruit out. But, you want the skin intact for your “Easter egg” serving bowls! So, carefully scoop out the fruit with a spoon. You can use any guacamole recipe you like. I just used my quick 5-minute recipe.
Once you’ve whipped up your guacamole, spoon it back into the avocado skins. Due to a little taste testing and the space the seeds take up, I ended up with only enough filling for 5 of the 6 bowls (I filled the bowls until the guacamole was just level with the edges). Once you’re avocado skin bowls are filled, then the extra fun part begins–decorating your “eggs”! All you need is your favorite sour cream and some food coloring! In separate bowls, just add a few spoonfuls of sour cream & a bit of food coloring until you have your desired colors. I went with pink, blue, and yellow. You can do as many colors as you’d like!
Place your colored sour cream in separate piping bags or just snack baggies with the corner cut off. Then, decorate your avocado eggs–just like frosting a cake! 🙂
I went with combinations of straight lines, wavy lines, and polka dots! The colors were perfect for Easter and complimented the avocado green well!
The boys loved telling me what each egg should have! And, the benefit? They each at an entire “egg”! I made guacamole the other night, but they didn’t want it. Turn it into their very own Easter egg and they gobbled it right up!! 🙂
I love the way they turned out. Something fun & different, cute & delicious! It’s a win-win in my book!
