I mentioned “bake sale” and neighbor gifts, because making the recipe in full will yield around 4 dozen cookies (depending on the size of your cookie dough scoops). But don’t let that deter you if you don’t have a large thing to bake for- the cookies are on the small side and they go fast around here!

Pumpkin Chocolate Chip Cookies with a Twist

Pumpkin chocolate chip cookies may in fact be the quintessential fall cookie. Soft and chewy, with all those pumpkin spice flavors,  they certainly are a staple around here during the fall. But these are pumpkin chocolate chip cookies with a twist! And, oh my goodness, they are SO good! Like, seriously, dangerously good! Pumpkin CookiesSo what’s the twist? It’s cinnamon chips!! That’s what puts the cinnamon in these pumpkin cinnamon chocolate chip cookies!

What are Cinnamon Chips? 

Cinnamon chips are just another kind of baking chips (like butterscotch chips, toffee chips, peppermint chips, etc). They’re made by Hershey’s and they are really fun, especially in fall baking. In fact, they happen to be the star of these easy pumpkin cupcakes too! The cinnamon chips are the lighter brown chips in the image below. pumpkin cinnamon chipsThe only problem is that they can sometimes be hard to find. Often, you can only find them in the fall months and not all stores carry them. You can usually find cinnamon chips on Amazon (affiliate link), though they are usually more expensive there. So, if you can’t find them, feel free to just omit. You won’t have the fun cinnamon flavor they give off in these cookies, but you’ll still be left with delicious pumpkin chocolate chip cookies! Other FAQs 

Can you make a smaller batch? Sure! I just like being able to use a whole can of pumpkin. So, I prefer to do it this way. Plus, the cookies store great (they could even be frozen) and even a large batch around here doesn’t last too long. They make great gifts too!

How long do they keep? We’ve had them in an airtight container on the counter for about a week and they’ve been fine. Honestly, they’re even better the next day after baking as the flavors get stronger. So, that’s a plus. You can also freeze them for longer storage if you’d like. In the freezer, they would keep for months!

Can you use fresh pumpkin puree? I haven’t personally tried it, but you should be able to. In that case, you’ll use about 2 cups. You may want to use a paper towel or cheesecloth to squeeze out excess water from the puree first though.

Can you use pumpkin pie spice? If you want a “spicier” cookie, sure! You could add a little to the mixture or sub it out for the cinnamon. You could also add a little pinch of nutmeg to the cookies if you’d like.

Do you have to use cinnamon chips? Nope – you’ll just lose the fun “twist” if you don’t use them. But, you’ll still be left with delicious pumpkin chocolate chip cookies. If you do omit the cinnamon chips though, just be sure to add another cup of chocolate chips!

What type of chocolate chips do you use? My go-to are semi-sweet chocolate chips! I actually am not a be fan of milk chocolate (gasp, I know!). If you don’t like semi-sweet chips or dark chocolate, you certainly can use milk chocolate chips in these. But, to offset the sweetness in the cookies and the cinnamon chips, I think semi-sweet are best in these cookies.

Can you add nuts? Sure! I’ve never made them with nuts, but I have no doubt they’d be delicious. Chopped walnuts or pecans would be both work well!

Why don’t the cookies look “done”? These cookies should still be soft in the center when you pull them from the oven. They will continue baking as they cool. If they still look extremely shiny and gooey, go ahead and keep them in for about 12/13 minutes. But try not to over-bake as then they tend to get more dry or tough, instead of that nice soft & chewy texture.

How big should the dough scoops be? About 1 heaping Tablespoon rounded or a medium cookie scoop. You don’t want to make these cookies too large or the centers will take longer to cook. And since they don’t spread too much, 1 dozen fit nicely on my baking stone!

Pumpkin Cinnamon Chocolate Chip Cookies

Soft & delicious, these pumpkin cookies are bursting with chocolate chips and cinnamon chips for a perfect fall treat!

Servings: 4 dozen

Ingredients

  • 1 15oz can pumpkin puree (not pumpkin pie filling)
  • 4 C flour
  • 1 Tbsp ground cinnamon
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 C granulated sugar
  • 1 C brown sugar
  • 2 eggs
  • 2 sticks butter, softened
  • 2 tsp vanilla
  • 1 C chocolate chips (semi-sweet recommended)
  • 1 C cinnamon chips

Instructions

  • Preheat oven to 350 degrees.
  • In a large bowl, cream together sugars and butter. Add in the pumpkin, eggs, vanilla, and cinnamon.
  • Once well combined, slowly add in flour, baking soda/powder, and salt.
  • Fold in chocolate and cinnamon chips.
  • Drop by rounded tablespoons (or use a medium cookie scoop) onto ungreased baking stones or cookie sheets lined with parchment.
  • Bake at 350 for 10-12 minutes. Allow the cookies to begin to cool (for about 5 minutes) on the cookie sheet.
  • Cool completely on wire wracks and enjoy!! Store in airtight containers. They’re even better the next day!
