Need something to change up the lunch routine a bit? Whether it’s a fun summer lunch outside by the pool, a picnic, or something different in the lunch box when back-to-school time hits, sandwich kabobs are a perfect kid-friendly meal idea. I’ve teamed up with Frigo® Cheese Heads® String Cheese to bring you some fun family-friendly recipes and this one is a winner!!
I’m always amazed at how simply changing up the presentation can encourage kids to eat well. My boys gobbled this down, lettuce and all. So, it’s definitely kid-approved. They were so excited about this! For the summer, you can make a whole fun sandwich kabob making station where the kids get to make their own. Or, for picnics and quick school lunches, parents can certainly put these together for kids in no time! No matter which method you select, you’ll just need some skewers/lollipop sticks and your favorite sandwich ingredients (large enough to fit the skewer). For serving kids, I recommend placing the ingredients on candy sticks (which you can purchase in the baking aisle at many stores or at craft stores) so there are no sharp edges. Parents may want to use a traditional pointed bamboo skewer though just to help make the holes in the food initially.
Ingredients we used:
- whole wheat bread (cut using small star and heart cookie cutters, you could always just cut small squares)
- Frigo® Cheese Heads® String Cheese (each stick cut into 3-5 pieces)
- Deli meat ham (any meat or even no meat could work)
- Large black olives
- Cherry tomatoes
- Dill pickles cut in chunks
- Butter lettuce
- Lollipop sticks
The beauty of a recipe like this is you can really do anything you want! You just want to make sure that your ingredients are large enough that they will hold together when pushing them on to the stick. To make things easier, I used the bamboo skewer to pass through each item first, then transferred everything to the blunt lollipop stick. So easy and so fun! The Frigo® Cheese Heads® String Cheese was great to use because it held together well on the sticks and is a kid favorite around here. Then, I loved using all the different vegetables to make the kabobs colorful. My kids normally will not eat lettuce or tomatoes on their sandwiches, but they ate every single thing on these kabobs! So, this is definitely a great idea for a snack or easy meal!
