Quick & Easy Lunch with Hillshire Farm #GrilledEssentials

Sometimes I struggle with lunchtime–finding something quick & easy for the boys, yet not wanting lunch to always consist of  chicken nuggets, mac & cheese, or peanut butter & jelly sandwiches. Leftovers are an easy solution, but we don’t always have those. So, when I heard about the new Grilled Essentials by Hillshire Farm, I thought it might be a good solution!

And, I was right! Each package contains two chicken breasts that are low in fat & calories! They would have been PERFECT for me the past few years when I taught! As a teacher, you always need a SUPER quick & easy lunch as we never had more than about 25 minutes to eat! They were easy to find in my Walmart–right on the deli aisle! And, there are 4 different flavors!I LOVED that there were coupons attached to the packages! So, I decided to get two different flavors–plain grilled chicken for the boys and Italian style for my husband and I. Both were great and it was so easy to prepare a quick & healthy lunch with them. Here’s what we ended up making:

Quick Chicken “Wraps”

We started with the grilled chicken. Each breast comes individually wrapped (again, really convenient for taking lunch somewhere). So, I unwrapped them & cut into thin slices.

I took whole wheat tortillas & spread a thin layer of ranch over it. Then, placed thin slices of the Grilled Essentials Chicken and tomatoes on top.

Next up, I put some lettuce & shredded cheese over the chicken & tomatoes. Note the paper plate–quick & easy, remember?! 🙂That’s it!!! I had a healthy lunch for us all to eat in just a few minutes. For the kids, I folded them over & made them more like a quesadilla-style “wrap”. And, for the adults, we just rolled them right up & ate! I loved how quickly I was able to make a lunch that was perfect for all of us to eat! They were great for my husband to take to work for lunch as well. It’s nice to know we have another convenient food item in Grilled Essentials that we can keep on hand (in the freezer) for busy weeks!
