You know we’re huge football fans and we love tailgating (or rather “homegating”). Football parties and football food are always a big hit around here. And, one such food that’s a crowd favorite is queso dip. It’s such a perfect football food don’t ya think?!…perfect for dipping or creating a “build your own” nacho bar! For a super easy dip, you can’t beat the 2-ingredient Velveeta and Ro*Tel queso!
You’ll find the recipe for this classic queso recipe on the back of the Ro*Tel can! For a party, here’s what I do:
- 32 oz. Velveeta cheese, cubed
- 2 cans Ro*Tel (undrained)
I layer the Ro*Tel and Velveeta in a microwave safe dish, then cook on medium high heat for 5-10 minutes (stirring occasionally). Nothing fancy, but it turns out great and is soooo easy! Of course, you can add all kinds of tasty things to the dip (like ground beef, chorizo, bacon, chicken…), but a nacho bar really is a fun way to go if you’re having guests. You can put out any number of things, from the meats listed above to all kinds of different veggies. We went with black beans, green chiles, sliced jalapeños, cilantro, and sour cream.
For a big game party, you can use some simple themed items like football-themed serving dishes, plates, cups, and/or napkins, team colors, and/or DIY items like a football field table cover, football utensil canister, and football party drink bucket. I use them all season for our football fun!
