Almond Joy Truffles
Almond Joy
Recipe type: Dessert
Serves: 36 truffles
  • 4 C coconut flakes
  • 3¾ C powdered sugar
  • 8 oz. slivered almonds
  • 1 {14 oz.} can sweetened condensed milk
  • 1 {16 oz.} package chocolate chocolate chips
  • 4 oz. white chocolate
  1. In a large bowl, mix the coconut, sugar, sweetened condensed milk, and almonds.
  2. Roll mixture into 1 inch balls and place on a wax paper-lined baking sheet. (don't worry if they're not perfectly round - they're easier to reshape when they're cold.)
  3. Refrigerate for at least one hour until firm.
  4. Melt chocolate chips in microwave (or a double boiler on the stove).
  5. Dip the coconut balls (I recommend using a toothpick) into the melted chocolate and place on wax paper. Let the truffles sit until the chocolate hardens (5-10 minutes).
  6. Melt the white chocolate and place into a piping page or small baggie with the corner cut.
  7. Drizzle white chocolate over truffles and let harden.
  8. Serve & enjoy!
