For us, the back to school grind is here. We just wrapped up our first week of school – 2nd grade for Big Brother and Preschool for Little Brother. Thankfully, everything went well. But, the hardest thing for me about the back to school routine is figuring out lunches everyday. We did the fun Olaf Frozen-inspired lunch as something special for the first day of school this year and the Turbo snail lunch was a fun treat from last year. But, most days, the lunches are nowhere near that elaborate! It’s really just important to me that there is a variety (not just PB&J sandwiches every day). But coming up with a diversity of reasonably healthy options (and one’s that the kids will actually eat) can get tricky. So, I’ve teamed up with Horizon Organic to share a few ideas for those school lunch boxes!
I’ve found that by changing it up, the kids do a much better job of eating their lunch. And, it’s a bonus if it’s fun! Instead of just the normal sandwich, you can do food-on-a-stick like the little bites shown above. Some fun cow graham crackers don’t hurt either! Doesn’t take much longer than a sandwich to make, but the boys love it! Even doing roll-ups on tortillas instead of regular sandwiches help provide some variety. If you do go the sandwich route, sometimes just cutting out sandwich shapes with cookie cutters can be a fun change for kids. I did that this week with “1, 2, 3” ham & cheese bites! And, they LOVED it when I did it with Star Wars cookie cutters!
In addition to adding some variety to the main dish, you can experiment with different sides and drinks. Sometimes even just using little individual containers & muffin cups can make things more appealing. I love sending Big Brother with some dips or yogurt served up in silicone baking cups. He loves it! I sometimes send a 100% juice box or a Horizon milk box (instead of just his normal water bottle) as a another way to make things more interesting!
