Skinny Slow Cooker Broccoli Cheese Soup2Yum! This slow cooker broccoli cheese soup has become a new family favorite – and the bonus is that it’s a “skinnier” version than MANY of the broccoli cheese soup recipes out there. This one has NO flour and NO half and half or heavy cream. So, it’s gluten-free, lower in fat, plus it includes a whole extra serving of vegetables thanks to some magic hidden veggies inside! I LOVE that it’s a recipe the whole family enjoys, but it’s one that is also much more in-line with some of my goals for 2015!!

It’s no secret that I have weight to lose. And, even more importantly, our family could be making healthier choices  – including the amount of eating out we’ve been doing, in the types of foods we’re eating, and in the activities we’re doing. 2013 was a great year for me in terms of making healthier choices and losing weight. Then, all of our medical crises happened and we unfortunately let the stress of all of that throw us off the wagon. We resorted to eating a lot more convenience food, turning to food for comfort, stress-eating, and we weren’t working out anywhere near enough. And somehow, here we are a year later…I’ve gained the weight back and we have NOT been good as a family about making the healthiest of choices. So, when I was given the opportunity to partner with Weight Watchers, I jumped at it! It’s a great way to start 2015!

I actually have been a member of and had success with Weight Watchers before. After the birth of Big Brother 7 years ago, Weight Watchers helped me get back to my pre-pregnancy weight. So, I know that it’s a program that I can be successful with! One thing I LOVE about Weight Watchers is the flexibility. I can still eat real food; cook our family’s food; still eat out normal restaurants, while having various tools to help be successful! One of the newest tools is Weight Watchers Personal Coaching! I like the idea of having a coach – someone to help chat about things (who’s been on the journey before) and to help keep the accountability there! So, it should be good! For now, I’m working on my game plan and getting everything lined up for a healthier start to the new year. And, that should mean some more “skinnier” and generally “better-for-you” recipes on the blog! The #1 recipe on the site already is the one pan salmon & vegetables dish, so I’m hoping to share more things like that…and this skinny slow cooker broccoli cheese soup!

Healthier Slow Cooker Broccoli Cheese SoupThe secret to this soup is that there is a whole extra serving a vegetables hidden inside – it helps with the creaminess (without adding things like half & half), while also adding extra nutrients and fiber. That secret ingredient is pureed cauliflower (which is also the “secret” addition in the skinny ham & potato soup)! Here’s the recipe:

Skinny Slow Cooker Broccoli Cheese Soup

This lighter broccoli cheese soup has an extra serving of vegetables and great taste! Made in the slow cooker, it's an easy family meal!

Ingredients

  • 3 T butter
  • 1/2 sweet onion chopped
  • 4 garlic cloves minced
  • 2 C vegetable broth
  • 3 C chicken broth
  • 2 bags 14-16oz frozen broccoli
  • 1 bag 14-16oz frozen cauliflower
  • 4 C shredded cheddar cheese
  • 4 oz cream cheese
  • 1 can 12 oz evaporated milk
  • 1/2 C shredded Parmesan cheese
  • pepper to taste

Instructions

  • Place butter in a small pan on the stove. Add onions & garlic and saute until onions cook through & just stat to brown.
  • While that sautees, cook the cauliflower (just so it's thawed). Place the thawed cauliflower and 1 cup chicken broth in a high powered blender & puree.
  • In a large slow cooker, pour in the sauteed onions & garlic, vegetable broth, remaining cups of chicken broth, frozen broccoli, evaporated milk and pureed cauliflower.
  • Cook on high for 2 hours or low for 4-6 hours.
  • Stir in cheeses until completely melted.
  • Remove some of the soup & puree in the blender. You can blend as little or as much as you like until desired consistency is achieved (depending on how many large chunks of broccoli you want).

Notes

*Be sure you're using evaporated milk, NOT condensed (BIG difference)!

Crock Pot Broccoli Cheese Soup A pretty good-sized bowl of this runs about 8-9 points on the new Weight Watchers Point Plus scale. Instead of eating with a side of bread, pair with a salad or fresh veggies for a good meal! It’s SO good!
