I love keeping some ingredients like this stocked up in our pantry as they’re so convenient, versatile, and ready to use for quick, everyday meals! This soup is one example! It’s SO good, quick, super easy to make, and requires just a few ingredients. I LOVE the simplicity of it! By using Pace® in this soup, you get a genuine southwest flavor with just the right amount of kick (you choose mild, medium, or hot). This really has a taste that’s reminiscent of a chicken tortilla soup! YUM! So good and so little work! You simply pour a few ingredients into your slow cooker and walk away. Once it heats up, you have a delicious dinner for the whole family! It’s perfect for busy back-to-school nights. In fact, you can even dump all the ingredients into your crock pot when the kids get home from school in the afternoon and have a hot dinner ready without any work! WIN!

Slow Cooker Salsa Chicken Soup

Ingredients

  • 1 can Swanson® Premium Chicken
  • 1 can Campbell's® Condensed Tomato Soup
  • 3 C chicken broth
  • 1 C Pace® I used mild
  • 1 can whole kernel corn partially drained
  • 1 can black beans drained and rinsed
  • 1/4 tsp cumin
  • dash of pepper
  • *Optional toppings/garnish - shredded cheese sour cream, cilantro, lime wedges, avocado, tortilla chips

Instructions

  • Place all ingredients in a slow cooker, stir. Cook on high for two hours.
  • Serve and top with desired items.
  • Enjoy!

You can set out different options and let everyone in the family create their perfect topping mix. It’s great with just cheese.
