Welcome to the 2012 College Football Saturday Tailgate Party! It’s Game Day!!!! And, we’re certainly excited! We can’t believe how early things are getting started this morning, with the Notre Dame vs. Navy game live from Ireland (how cool is that?! ) on at our house starting at 6am. Super fun! But, the real excitement for us will be at lunchtime, when our beloved Nebraska Cornhuskers take on Southern Miss. I decided to change things up and go healthy for a fun tailgate food today (you know, instead of something like football cake pops and other things of that nature) with a Huskers veggie tray!
Fun huh?! Definitely a healthy way to incorporate some team spirit into your tailgating. Honestly, it didn’t turn out quite as fabulous as I had envisioned, but I think it works nonetheless. Now, obviously this concept wouldn’t be doable for every team out there, but anyone with red & white as part of the colors could certainly do the exact same tray (with just a different letter). The cauliflower was perfect to use to help support the tomatoes since it’s so easy to cut different sizes. You could also attempt inverting it by making the team letter white with the cauliflower. The one thing I found that made it look better was to actually build up the cauliflower so you have two layers of tomatoes. The single layer just didn’t seem to pop as much.
While I was working, I was thinking about all the other team colors that would be doable for a veggie tray. Red, white, green, yellow (using yellow bell pepper or yellow squash), orange (carrots or orange bell pepper), and black (black olives) are all team colors that you could easily make work! The concept is certainly a fun way to incorporate a healthy option into your game day fun!
