Hello everyone! I’m Kelly from Eclectic Momsense.  When I first thought about this Cornucopia of Creativity challenge, my mind immediately went to crafting.  It came apparent to me though, as the date got closer, that when I think of harvest time and Thanksgiving my mind immediately goes to food! Over the last few weeks we’ve been cooking and baking up a storm.  From pumpkin protein bars (thanks Becca) to homemade applesauce.

So, I’ve decided to share a brand new recipe that will become a tradition during fall for years to come.  Nothing says Thanksgiving to me like family and traditions.

Homemade Applesauce

I stumbled upon this recipe after we did some apple harvesting.  I was left with pounds of apples and needed something tasty the whole family could enjoy.  Surprisingly my search landed me on and a very simple Homemade Applesauce recipe.

▪                4 apples

▪                1 cup orange juice

▪                1/2 teaspoon cinnamon

Peel, core, and slice the apples.  Try an apple peeler, it takes seconds to peel, slice, and core an apple.  Slide a plastic bag under the end to catch all the scraps.

Mix the orange juice, apples, and cinnamon in a saucepan.  Simmer the mixture covered for 30 minutes.  Allow it to cool before mashing.  I used a food mill with a medium grate for a chunkier texture.  You can also use a potato masher or food processor to get different textures.  Enjoy warm or chilled in the freezer.  I canned my leftovers to enjoy all season long.  16 apples yielded 4.5 pint jars.

Thanks Sara for inviting me to join in the creativity! You can find me on Facebook, and Twitter.  Stop by and share your favorite fall recipes.
