With little boys and only one in school, we haven’t quite hit the morning frenzy yet where we’re rushing to get everyone out the door. However, that’s not to say that our mornings sometimes aren’t a little rushed. Mr. Mom Endeavors has a lengthy commute each morning and often eats breakfast on-the-go. And, while I love making eggs and other homemade breakfast options, it sometimes just doesn’t happen. So, I like to make sure we’ve got some healthy, yet convenient breakfast items on hand. Right now, Safeway (and affiliate stores) has some great deals on breakfast items as part of their Buy 4 Save $4 promotion. So, I decided to stock up on a few things for convenient, quick breakfast ideas (you can see my full shopping trip in this google+ story here).We LOVE yogurt around here, especially the greek variety. Dannon Oikos were on-sale for $1 and then due to quick-approaching “best buy” dates, I snagged them for just $.50 each! Super deal. As part of the promo, I found some roasted nut Nature Valley bars–and gluten free at that! Yay! Then, the boys love Nutri-Grain bars and I love that they don’t have any high fructose corn syrup in them! Perfect healthy breakfast or snacking options.
In addition to the healthy convenience items like individual yogurt cups, bars, etc., there are a few go-to recipes I like to make at home that are really quick to heat up & serve when made in advance:
