Sausage & Peppers Sandwich Recipe {Maternity Leave Guest Post}

Hi Mom Endeav­ors read­ers! I’m Shan­non, and I blog over at Madi­gan Made. Sara invited me to share a recipe with you today so that she can spend some qual­ity time with her new lit­tle man. I am more than happy to help out. I can’t send her a real casse­role… but I can send her this recipe to show y’all!

I thought I would share one of my husband’s favorite din­ner recipes, a sausage and pep­pers sand­wich. It is soo good!

Our tastes lean towards spicy, so we pre­fer using hot, Ital­ian sausage… but you can use sweet sausage instead. The meat and veg­gie sauce alone is fan­tas­tic and would also be very good served with a side of pasta. But we pre­fer to make a big sub sand­wich out of it instead by using really good, Ital­ian, long rolls.

And who doesn’t like hearty sand­wich? :)

Sausage and Pep­pers Sand­wich Recipe:

Ingre­di­ents:

  • 8 (4 ounce) links Ital­ian sausage
  • 2 table­spoons butter
  • 1 14 oz. can of diced toma­toes, lightly drained
  • 1 yel­low onion, sliced
  • 1/2 red onion, sliced
  • 4 cloves gar­lic, minced
  • 1 large red bell pep­per, sliced
  • 1 green bell pep­per, sliced
  • Salt and pep­per, to taste
  • 1 tea­spoon dried basil
  • 1 tea­spoon dried oregano
  • 1/4 to 1/2 cup beer or wine  (broth or water could be sub­sti­tuted, too)
  • 8–12 slices of pro­volone cheese
  • 6–8 long rolls

Instruc­tions:

Brown: Heat up a large, deep skil­let on medium heat. Brown the sausage on all sides and then remove it from the pan and set aside. Cut each link in half.

Sauté; Drain excess grease from the pan. Melt the but­ter in the remain­ing sausage drip­pings and sauté all of the onions for sev­eral min­utes. Add the pep­pers and gar­lic and con­tinue to cook for a few more min­utes. Add the sea­son­ing, spices, toma­toes and 1/4 cup beer. Stir and cook until veg­gies are tender.

Sim­mer: Add the sausage back to the pot and sim­mer the mix­ture, cov­ered, for 15–30 min­utes. Stir occa­sion­ally and add more liq­uid /beer if needed as the sauce starts to reduce.

Serve: Cut the rolls length­wise and add a layer of cheese in each one. Fill the bread with sausage and top with some of the veg­gie mix­ture. Enjoy!

Serves 6–8. (Depend­ing on the size of the rolls and how big you like your sandwich!)

This sausage and pep­pers recipe is so sim­ple to make… and if you are lucky enough to have left­overs, it is even bet­ter the next day. Yum!

In fact, except for the rolls, this recipe does ‘keep’ really well. These sausage and pep­pers would be a fab­u­lous idea to bring to some­one you know that needed easy meals to reheat. (Like some­one who just had a baby? ;D )
