Pasta Dish Freezer Cooking

Staying true to the notion that freezer cooking does not have to be a huge, all-day production, I recently did another little batch–just like the quick ground beef session. Making multiple dishes all at one that use similar ingredients is such a time saver!
All at once, we made Hamburger-Macaroni “Goulash”, Baked Ziti and Homemade Marinara Sauce–and only dirtied 3 dishes.
Here’s how:

– In a large electric skillet, brown 4 lbs. of ground beef with 1/2 medium onion chopped and 2 cloves of chopped garlic. 

– As that browns, boil a pot of water & cook macaroni noodles (one full package)
– Once brown, transfer half the beef ton a stock pot on the stove. In that pot, add ingredients make your homemade pasta sauce

– While your pasta sauce simmers, add the celery, corn, and tomatoes to the beef in the electric skillet.


 
– Then, once the macaroni is done, add it to the skillet–if you can, take the noodles out with a slotted spoon to save the water.
– Using that same pot & water, boil one box of pasta (ziti, penne, rotini, etc).
– While that pasta boils, stir your “goulash” ingredients in the electric skillet and top with 1C of grated parmesan cheese. One dish done! Serve or put into containers for the freezer–this made enough for two large containers (for our family, each container is enough for two dinner’s & lunch leftovers)

– Once the pasta is done, drain it & transfer to the pot of homemade meat sauce and mix together well. Transfer the mixture into two 9 x 13 pans. Top with mozzarella & parmesan cheeses. For freezing, cover and put in the freezer. On serving day, bake at 400 for 40 minutes (or until it’s heated through).
Not even two hours, only a few dishes to clean, and quite a few meals ready to go!!
