Slow Cooker Coconut Lime Chicken

Ingredients
2-3
lbs
boneless chicken breasts
1
can lite coconut milk
juice from 2 limes
about 1/4 cup
1
tsp
garlic powder
2
TBSP
soy sauce
I use gluten free Tamari
1/4
tsp
ginger powder
*optional - extra lime juice & shredded coconut
Instructions
Place chicken in the crock pot and pour all the ingredients over top.
Cover and cook on low for 6-8 hours (or 4-5 hours on high).
Serve over rice and garnish with thin lime slices. For extra flavor, add a squeeze of lime juice and a sprinkle of shredded coconut.
