This was really, really good! I got a lot of compliments on this at a family event. It makes a ton!! Great for bigger get togethers, but you would have a ton of leftovers if you made this as a side dish for a family of 4. We had 6 adults and only half was eaten.

I make corn casserole in the oven at 350 for 1 hour. On mine the cheese is on the top not mixed in. I wonder if I doubled how long it would take to cook on high
1 can cream style corn
1 can whole kernel corn
3 eggs
4 oz melted butter
1/2 cup chopped green pepper
1/2 cup chopped onion
1 box Jiffy corn muffin mix
1 cup shredded cheddar cheese

I thought I’d reply to a few questions even though they were years ago now.. 🙂 Growing up, we always did a ratio of pretty much 1 of every ingredient. So 1 cup, 1 egg, 1 box, etc. Which leads me to believe that you can be pretty darn flexible based on what you have on hand. And we’ve done it often without cheese, too. I’m not sure you can even deliberately mess this recipe up! LOVE it! 🙂 Thanks for the great pics and instructions, Sara!!
