Yum! Few recipes seem as perfect for football watching than Chile Con Queso. There’s just something about sitting around munching on chips & dip that seem to go hand in hand with football-watching (and various other parties or sporting events). While it’s certainly not the healthiest option, it is indeed tasty and a crowd pleaser! With the Super Bowl less than a week away, this Chile Con Queso dip is a great option to whip up!Chile Con Queso DipNow, you certainly can go the traditional just nacho cheese/queso dip route (or the ever “famous” Velveeta & Rotel), but this is SOOooo much better. It takes the classic Velveeta queso to a whole new level! That because you first start by browning some onions and ground beef, adding in your favorite seasonings to taste. Ground beef & onionsI happened to find some Velveeta Queso Blanco that I wanted to try. So, that’s what I went with. But, I’m sure regular Velveeta would work fine. Just cube up the Velveeta and add it in. Blanco VelveetaNext up, add in your favorite salsa and some green chiles. If you like it extra spicy, add in some fresh (diced) jalapeño. Some diced fresh cilantro would probably taste great too. We just used salsa & green chiles though as it’s what I had on hand.  Making chile con queso dipMmmm! Keep stirring ’til everything is all nice and melty. Then, see if people can resist just walking over to sample while your cooking. I could barely manage getting pictures around here! Chile Con QuesoYum! The end result is delish! Chile Con Queso Dip

This Chile Con Queso dip is easy to make and is a total crowd pleaser. Perfect for parties and football-watching!

Ingredients

  • 1 lb ground beef
  • 1/2 medium onion chopped
  • 2 lb block Velveeta Queso Blanco
  • 1/2 C salsa
  • 1 small can chopped green chiles

Instructions

  • Brown onions & ground beef in a sauté pan or skillet.
  • Cube Velveeta. Once the onions & beef are cooked, add Velveeta to the pan to start melting.
  • Add salsa & green chiles to the cheese & meat mixture.
  • Stir on low heat until cheese is melted and everything is well-combined.
  • Serve immediately, with chips!

Notes

If you like your dip on the spicy side, adding some diced jalapeño to this would be a good addition. We like to keep ours a bit more mild. Also, if you can't find the Blanco Velveeta, regular would work fine.
