BBQ Pulled Pork Sliders

Did your week­end include lots of foot­ball watch­ing like mine did? Things started out so well, but then turned in to a sad day for Husker fans like us. Just look at Baby Brother… Yah, that pretty much sums up how our house­hold (and the rest of the “Husker Nation”) felt on Sat­ur­day night. So, since the game itself isn’t wor­thy of talk­ing about any fur­ther, I’ll share with you some­thing that was awe­some about our “home­gat­ing” game time this weekend…

Slow cooker Coca-Cola BBQ Pulled Pork Slid­ers with sauteed onions & apples!!!

Seri­ously, these slid­ers are per­fect tail­gat­ing food. They are absolutely deli­cious, easy to make, and the addi­tion of the apples make them per­fect for fall!

Here’s how to make them:

You’ll start with your crock pot, 3–5 pounds of your choice cut of pork (I had 4+ pounds of pork shoul­der coun­try style ribs), about 12oz. of Coca-Cola, and 1C of your favorite BBQ sauce. Dump it all in your crock pot and cook until fork ten­der. I cooked mine on high for about 5 hours and it lit­er­ally just fell apart to the touch. Using a slot­ted spoon, I scooped out the meat into a pan & shred­ded the pork with a fork (hey, we’re rhyming now! ;) ) The meat was deli­cious on its own, so you could totally just stop here. But, I wanted to spruce things up a bit! So, I added sauteed sweet onions & apples. To do this, just thinly slice (about a 1/4 inch think or less) some sweet onion and a crisp apple (Granny Smith works best for a nice, tart & crisp addi­tion). In a pan with a bit of but­ter & olive oil, start saute­ing the onions first. Once those are just about done, throw your apples in–just for a minute or two. You don’t want mushy apples!  Then, set every­thing out for slider build­ing. The key thing here are the KING’S HAWAIIAN® mini sub rolls (or orig­i­nal rolls). They add just the right amount of sweet! If you want some­thing a bit big­ger than a slider, King’s Hawai­ian has sand­wich buns that would be per­fect!
