Homemade Angel Food Cake with Warm Berry Compote Recipe

Ingredients
Angel Food Cake:
9egg whitesabout 1 and 1/4 cups
1 1/2cupssugardivided
1cupflour
1tspcream of tartar
1tspvanilla extract
1/4tspalmond extract
1/4tspsalt
Berry Compote
1cupmixed berriesI used cranberries, raspberries, strawberries, and blueberries
1/4cupcranberry juiceapple or orange juices work well too
1/4cupgranulated sugar
1TBSbutter
Instructions
Pour egg whites into a large bowl and set aside for 30 minutes (allowing to come to room temperature).
Sift 1/2 cup sugar and flour together twice and set aside in a small bowl.
Lower oven rack to the lowest position in the oven and preheat oven to 350°.
Add the cream of tartar, vanilla extract, almond extract, and salt to the egg whites. Beat mixture on medium speed until soft peaks form. Once soft peaks form, beat on high speed, gradually adding the remaining sugar (a couple tablespoons at a time) until stiff peaks form.
Gradually fold in flour mixture.
Carefully spoon batter into a 10-inch tube pan. Gently stir/cut through batter with a knife or fork to remove any air pockets/bubbles.
Bake 30-40 minutes, until lightly browned and entire top appears dry. Immediately invert pan over a wire cooling rack and cool completely, at least 1 hour.
While the cake cools, prepare the berry sauce. In a small sauce pot, melt butter over medium heat. Add sugar and juice, stirring until the sugar has dissolved. Add the berries and stir.
Turn heat up to medium high and allow the mixture to come to a boil. Boil for 2 minutes, while stirring, then turn the heat down to low. Simmer for 15-20 minutes or until sauce has thickened.
Notes
If you prefer thicker sauces, this sauce may turn out a bit thinner than you desire. In that case, mix 1 tsp of cornstarch with 1 TBS water, then pour into berry compote. Bring to a boil for 1 minute, then reduce heat and simmer for a few minutes. This will thicken up the sauce substantially.
