Ingredients
Pumpkin Bars
2cupsflour
1teaspoonbaking soda
½teaspoonsalt
1tablespoonpumpkin pie spice
1cupbuttersoftened
1cupsugar
1cupcanned pumpkin puree
1large egg
2teaspoonsvanilla
1bag10z cinnamon chips (approx 1.5 C)
Optional - Cream Cheese Frosting
1 8ozpackage cream cheesesoftened
1stick buttersoftened
1teaspoonvanilla
3-4cupspowdered sugar
Instructions
Preheat oven to 325. Generously grease a 9x13 pan.
In a medium mixing bowl, add flour, baking soda, salt, and pumpkin pie spice in a small bowl. Stir until well-combined.
In a separate medium bowl, cream butter and sugar until light and fluffy. Add egg and vanilla to mixture. Mix well. Then beat in pumpkin.
Add the dry mixture to the wet and mix until well combined. Fold in cinnamon chips and spread batter evenly into pan.
Bake for 30 minutes or until edges begin to pull away from the pan and the center is set (toothpick inserted in the center is clean).
Cool completely before cutting.
*Optional: While bars bake (and cool), prepare the frosting. In a mixing bowl, cream together cream cheese, butter, and vanilla. Slowly add in powdered sugar (1 cup at a time), until desired sweetness is reached.
Once bars are cool, spread on frosting, cut and serve!
