Ingredients
5Cold fashioned rolled oatsold fashioned, not quick cooking
3/4desicated coconut
3TBSPchia seeds
2cupcoconut yogurt3 containers Light & Fit Toasted Coconut Vanilla recommended
4eggs
2ripe bananas
1Cpineapple tidbits or crushed pineappledrained well
¾Csugar
3tspbaking powder
1tspbaking soda
¼tspsalt
Instructions
Preheat oven to 400 and prep muffin tins (with non-stick spray or liners).
Grind the oats into "oat flour" in a food processor or high-powered blender (if desired, you can combine the coconut & chia seeds with at the same time).
In a large mixing bowl, combine all dry ingredients.
Then, add all wet ingredients and stir well until mixture is well combined.
Spoon batter into the greased muffin tins and bake for approximately 18-20 minutes (until a toothpick comes out clean).
