These Peeps Pistachio Salad dessert cups are perfect for your Easter celebrations!

Ingredients
1small box pistachio pudding
1can20oz crushed pineapple, undrained
1-2Cmini marshmallows
1tub whipped toppingwe like Tru Whip
1Cshredded coconut
Peeps1 per dessert cup
green food coloring
small mason jars or clear cups
Instructions
In a medium bowl, combine pudding, crushed pineapple (with juice), mini marshmallows, and whipped topping. Stir until pudding powder is all incorporated and contents are well-combined.
In a small baggie or bowl, mix coconut with a few drops of green food coloring. Stir/toss to color the coconut.
When ready to serve, spoon the pistachio salad into your clear jars or cups. Top with a small amount of coconut and the Peep on top!
