Ingredients
2 16ozcans refried beans
1/4Csour cream
3/4Csalsa
2Cshredded cheesewe like to use a cheddar, Monterey Jack, and/or Pepper Jack blend
chopped green onions for garnish
Instructions
Preheat oven to 375
In a bowl, combine beans, sour cream, salsa, and about 1.5 cups of cheese.
Transfer mixture to a deep pie dish, small casserole dish, or other oven-safe serving dish.
Top with remaining cheese and bake for approximately 20 minutes*
Remove from oven, top with green onions (or cilantro) for garnish.
Serve warm with tortilla chips
Notes
*If you don't want to heat up the oven, you can also microwave this (usually around 5 minutes - until the mixture is heated through and the top cheese is melted).
