‘Tis the season for Chex party mixes! If you’ve been to any of the stores recently, it’s obvious with the giant displays of various Chex cereals! A couple of Christmases ago, my mom made a white chocolate chex mix that quickly became deemed, “Christmas Crack”. It was so tasty that people just could.not.stop eating it! I think any time you mix salty & sweet, it’s a pretty popular combination! The beauty of these types of recipes is that you can substitute out just about anything. Don’t have Chex? Use Crispix and/or cheerios instead. Use raisins instead of craisins (or leave them out altogether). Use peanuts instead of mixed nuts (or leave them out altogether too). Add some m&ms if you want. Like it sweeter? Add more white chocolate! Pretty much, you can’t go wrong with this! Let the kids help you concoct your own family’s version! It’s a great thing to let the kids help with!

Here’s the version Little Brother and I made this week:

White Chocolate Chex Mix – aka “Christmas Crack”

Ingredients

  • 1 12oz box of Rice Chex
  • 2 cups pretzels (we used holiday shapes)
  • 2 cups craisins
  • 2 cups mixed nuts (chopped)
  • 1 to 2 lbs. white chocolate (or almond/candy bark)

Directions:

  1. In a large bowl, combine all dry ingredients.
  2. Melt the white chocolate. I always just use the microwave, but you can get a smoother melt by going with the fancier double boiler method!
  3. Pour melted chocolate over the dry ingredients and combine. You want everything to be coated–how well coated is totally up to your discretion. I’m not a fan of being too sweet, so I tend to use a little less. If it’s not coated to your liking, then just melt some more and add it in.
  4. Pour mixture on to a large cookie sheet lined with wax paper. Allow to dry completely.

Then, place it in baggies or tins for storage…or package it up for gifts! Super easy to make and SUPER yummy!

Enjoy!
