Hi there Mom Endeavors readers! I’m Katie from Sweet Rose Studio. I want to say a quick CONGRATULATIONS to the Mom Endeavors family on the birth of Baby Brother last week. I’ve known Sara IRL (In Real Life) for a few years now and I couldn’t be happier for her. Baby Brother is one lucky kiddo to have her as his Momma! But on to what I’m here to share with you….

…a fresh recipe perfect for those hot summer nights: Sweet Summer Chicken Salad!

After finding some boneless, skinless chicken breast, I also gathered up various other ingredients for the perfect salad: sliced almonds, sunflower seeds, dried cranberries, apples, and mild cheddar chunk cheese.

Chop the lettuce as you wish. We prefer Romaine cut into thin strips, but you can choose what suits your fancy.

Slice the block of cheddar in half and shred it. I liked to think as I was doing this that I was getting an arm workout along with my healthy meal.

I used an apple/slicer/corer to cut the apples and then cut each slice into smaller chunks.

I’m not the best with a grill. Actually, I’ve never really tried to grill, but I’m pretty sure my husband has the market cornered on grilling in our home. While I was preparing the rest of the ingredients, he handled the grilling of the chicken.

He does a pretty good job, don’t you think? When the chicken is done being cooked, cut thin slices and lay it on top of the prepared salad.

Voila! A quick, easy, yummy salad that has health and taste all combined in one yummy plate. Enjoy!
