This is a great recipe to get veggies/fruits and grains into someone who "detests" them and won't eat them individually. He loved the muffins. :-) I added 3 Tbsp Chia seeds to the oatmeal before blending. I want to play with a different alternative for sugar...stevia or ?? but didn't want to play with that this morning. I used a stoneware muffin pan and baked for 25 minutes....could have gone 28-30. I filled the muffin cups to the top of the pan. Then because I didn't want to deter things with the cranberries, I left them out for the muffins but added them afterwards and put the remaining mix into a greased stoneware loaf pan. Baked for 35 minutes. Letting it cool now but I think it will make a nice breakfast/snack bread. I liked the idea of the diced apples instead of the cranberries. Will try that another time. This recipe is a keeper. Moist and yummy!!

I know this is old, but for anyone else who can't/didn't have applesauce, here's what I did. In a measuring cup I mashed a 3rd banana, added 1/4 cup oil to that, and then up to the 1 cup line with plain kite hill vegan yogurt. I also used a vegan scrambled egg product called "Just Egg" in place of the chicken eggs. I used 3/4 cup of that. These turned out REALLY GOOD. A keeper for sure as we are both gluten free and vegan here.

Hi Caitlin,
We just did the applesauce to cut down on melted butter/oil. I'm sure you could try either in place of the applesauce though.
