Mini Sausage Pancake Muffins

Quick and easy, the tasty sausage pancake muffins are the perfect breakfast bites that the whole family will love.

  • 2 C dry pancake mix (homemade or store bought)
  • 1 C milk
  • 1 large egg
  • 1 TBSP brown sugar
  • 1 pkg Johnsonville Fully Cooked Breakfast Sausage
  • *Butter, Maple syrup (or additional toppings)
  1. Preheat oven to 350ºF. Lightly grease mini muffin pan.
  2. In a mixing bowl, whisk together pancake mix, milk, egg, and sugar. (Batter will be thicker than regular pancake batter - more like a muffin batter).
  3. Spoon approximately 1 TBSP of batter into each muffin well.
  4. Cut sausage links into thirds. Place one slice of sausage link into the center of each muffin well.
  5. Bake for 10-12 minutes, until muffins are golden and cooked through.
  6. Serve warm with butter if desired and maple syrup for dipping.
These can be made ahead in large batches and frozen if desired. From frozen, just reheat the muffins in the microwave.
