Light, simple, and delicious, this Tuscan Zucchini Noodle Skillet cooks up in one pan for an uncomplicated dinner!

  • 1lb sweet Italian sausage
  • 4-6 medium zucchini, spiralized
  • 1 jar Bertolli red sauce
  • 1 C shredded mozzarella cheese
  • Shredded Parmesan cheese (garnish/to taste)
  1. Wash & spiralize the zucchini. To release excess water, place zucchini noodles in a colander with a sprinkle of salt. Set aside while you cook the meat.
  2. In a large skillet on medium-high heat, brown the ground sausage. Once the sausage is done, add zucchini noodles*.
  3. Toss the zoodles with the meat for just 2-3 minutes (don't overcook the zucchini).
  4. Pour the jar of sauce over the mixture and stir in mozzarella.
  5. Add Parmesan to taste to serve.
  6. Enjoy!
*To remove even more water from the zucchini, squeeze the noodles in a paper towel before adding them to the cooked meat. Doing this helps prevent the meal from being too runny as the zucchini loses its water.
