Lighter Broccoli Cranberry Salad

A lighter take on the traditional broccoli cranberry salad!
Recipe type: Side Dish
Serves: 4-6
  • 1 medium-large head of broccoli, chopped into bite-sized florets
  • ¼ -1/2 medium red onion, diced
  • ⅓ cup dried cranberries
  • ⅓ cup sunflower kernels
  • 4 slices bacon, cooked and crumbled
  • ½ cup plain Greek yogurt
  • ¼ cup mayo
  • ½ TBSP sugar
  • 2 TBSP red wine vinegar
  1. In a large mixing bowl combine broccoli, red onion, dried cranberries, crumbled bacon, and sunflower kernels.
  2. In a small bowl, whisk together Greek yogurt, mayo, sugar, and vinegar.
  3. Pour the dressing to the salad and stir to coat. Refrigerate until ready to serve (flavors come together better if you make at least a few hours in advance).
