This watermelon jicama salad is light and refreshing - a great side dish.

Ingredients
  • Half a watermelon, cubed in large bite-sized chunks(approx 8 cups)
  • 1-2 cups diced jicama
  • 1 mango, peeled and cubed
  • 1 small bunch cilantro leaves, chopped (approx ¾ cup)
  • Juice of 2-3 limes
  • 1 tsp salt (I used coarse sea salt)
  • ¼ - ½ teaspoon black pepper
Instructions
  1. Combine all ingredients in a large serving bowl. Stir to mix well.
  2. Cover & refrigerate until chilled.
  3. Serve cold and enjoy!
