Slow Cooker Pot Roast with Vegetables

This slow cooker pot roast is easy to make and delicious!

Serves: 6
  • 1 3-4 pound boneless roast
  • 1 medium sweet onion
  • 4-6 red potatoes, quartered
  • 4-6 carrots
  • 1 C broth (beef or vegetable is ideal)
  • ½ C balsamic vinegar
  1. Wash and cut vegetables. Cut onion into think slices. Quarter potatoes and carrots.
  2. Place cut vegetables in the slow cooker, onions first.
  3. Place roast on top of vegetables.
  4. Pour liquids over the meat.
  5. Cook on low for 6-8 hours or on high for 4 hours.
*The numbers of potatoes and carrots really depends on the size of the vegetable itself and the size of your slow cooker. You definitely want at least one per person - two if the carrots & potatoes are on the small side!
