Slow Cooker Holiday Meal Prep

During the busy holiday season, utilizing your slow cooker is a great way to save on time and oven space. And anything you can do to make meal prep less complicated or labor intensive (especially during the holidays) is a WIN! So, we actually often have more than one crock pot going during holiday meal prep. I’ve done overnight pumpkin pie oatmeal in the slow cooker for a great Thanksgiving breakfast. And, slow cooker cherry dump cake is a PERFECT time-saving holiday dessert! So good and SO easy!


But to really make holiday meal prep easier, I especially love making side dishes in the slow cooker! Our go-to options are slow cooker mashed potatoes (I still need to post a recipe on how I like to do that) and this corn casserole!Crock Pot Corn CasseroleMMmmmmm!! So good! It tastes delicious as a Thanksgiving side dish with turkey, but also works well as a Christmas or Easter side dish to pair with the holiday ham!

Making Slow Cooker Corn Casserole

While it might not look like anything fancy, this corn casserole is incredibly tasty, only requires a few ingredients, and is SO easy to make in your slow cooker. Plus, it’s a crowd favorite – don’t plan on a ton of leftovers. So, this one is definitely a win for your holiday meals.

Once you have the ingredients, it’s a completely uncomplicated recipe. With only 5 minutes of prep time, the longest part of making this recipe will be just opening the cans of corn! All you do is dump everything into the crock pot, stir, and let it cook. Easy Crock Pot Corn Casserole

Ingredients

  • 2 cans cream style corn
  • 2 cans whole sweet corn drained
  • 2 8.5 oz boxes Corn Muffin Mix
  • 8 oz 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 stick butter 1/2 cup melted

Instructions

  • Dump all the ingredients into the slow cooker.
  • Stir to combine well.
  • Cover and cook 2-3 hours on high heat, until cooked through and center is set.

Notes

This amount serves a larger group (12-15 servings). For smaller groups, you can cut the ingredient amounts in half. Though the leftovers heat up nicely, so it doesn't hurt to make a big batch!

    this sounds amazing but I wonder how it would taste without the cheese? I am lactose intolerant and even a little cheese is mserable. I tolerate sour cream just fine. Thanks!

    2. I’ve made corn casserole for years and have never put cheese in it. I was looking to see if I could make it in the crock pot when I found this recipe. It’s exactly like the one I use except for the cheese. Believe me—it’s delicious even without the cheese! And thanks, Sara, for showing me how long to cook it in the crock pot.

      I make this every year in the oven and have never added cheese. However, my recipe calls for 2 beaten eggs.
      i’m going to try it without the eggs this year in the crock pot !

        1. Hi there! Try 350 for about 45-60 minutes (or until a toothpick comes out fairly clean). You don’t want it to get too dried out, but the casserole should be fairly set in the middle.

      This is a time honored traditional recipe at our house at Thanksgiving. In fact the kids request it other times during the year. I have never made it with cheese. Its still amazing!

  3. I’ve never had corn casserole. It looks delicious. Is it a side dish? What do you typically serve it with?

    1. It is SO yummy! It works great as a side dish for the holidays I think, but really anytime. Serve it up with a main meat dish – chicken, ham, turkey, pork chops, ribs – and serve up a green veggie too. YUM!

    2. Yes it’s a side dish and it’s great with Turkey or Ham at the holidays. It can be served at other holidays as well with pretty much everything.

      Hi! I’ve always made this dish in the oven but my husband signed me up to make it for his office Christmas party and I needed a way to keep it warm, so I am excited I found this slow cooker version! This side dish is great with anything, but I always make it with my beef or chicken enchiladas. It also works as an appetizer – just double the amount of sour cream and cheese to make it creamier and cheesier. It is delicious. Thanks Sara for the recipe!

    Great dish. I make it with Mexican corn. Taste great with or with out cheese. Also, I didn’t have sour cream so I made it with cream cheese works the same. Only 2 hrs at high in crockpot. Take lid off for a little to great it crispy on top.

  7. I’ve never thought to do this in a crock pot. I’ve always done it in the oven. This dish is always a pot luck and holiday dinner hit. There’s rarely a drop left.

  8. I make a corn casserole every year for Thanksgiving or Christmas. sometimes with cheese and diced green chili or cheese and diced ham. I make it in the oven and use eggs as one person stated. This year I signed up to make it for our Thanksgiving pot luck but didn’t think about how to keep it warm or reheat it when its time to eat. Thus, I found this recipe! I am excited to try it. I think I will leave out the eggs but add my green chili and salt and pepper.

        So I made it with the green chili for my work potluck and it was a huge success!! Everyone loved it. No leftovers and many asked for the recipe!! I am huge on cheese too so I used two cups. It was perfect. Mixed it all before I left home. Let it cook at my desk until set up. Oh, I did turn the pot half way through to cook evenly!! Thank you so much for saving my behind with this easy recipe!!

    I made this the first time for a large family reunion, where we have soooo much food. I have been asked for the recipe over and over. It is a requested item for the reunion now. I am going to try to double it, so I will let you know it goes

        I doubled the recipe (without cheese) in a 5 quart crock pot. It came pretty close to the top as it puffed up some while cooking, but it worked. I cannot give you an exact time as I did not leave enough time to completely cook it before I had to leave for my event. Cooked it for 3 hours and 20 minutes, then put it at a large box surrounded by dish towels. Closed the box and surrounded it with a blanket to keep the heat in. It sat like that in the car for over an hour, and when I got to my destination, it was almost completely cooked. Just a small area in the center that was not quite set. My guess is that 3 hours and 45 minutes to 4 hours would be the correct cooking time on high. I would check it at 3:45 so that it doesn’t dry out if it’s done. So yummy,!

      I am trying it by 1 whole recipe and 1/2 recipe.
      3 cans creamed corn
      2 can corn
      1 of fresh corn we froze
      12 oz sour cream
      Chrese a guess.

    Most of my slow cooker dishes are pretty bland but I received a lot of compliments about this one. Definitely a keeper.

    BTW, I used a 4-qt slow cooker. 3 hours was way too long, 2.5 hours still too long, next time will try 2 hours. Also I discovered slow cooker liners really help in the clean up. I found them at Aldi’s (4 for about $1.50).

    P.S. I didn’t know the capacity of my Hamilton Beach crock pot so I did an internet search for my model. Turns out there is an outstanding product recall. 4,700 users reported their handles breaking with a couple of people getting burned. I initiated the process but don’t know what they will offer. I did have to cut the power cord and send them a picture.

    I made this for a camping trip of 4 families including 8 kids, it was the perfect amount. Cooked on high for 3.5 hours. It was still a little gooey than I prefer when I make this in the oven but still good and everyone liked it. Thanks!

    I would like to make this receipt in the oven instead of crockpot because I’m travelling. Would I use the same ingredients?

    1. Yes – same ingredients. Try 350 for about 45-60 minutes (or until a toothpick comes out mostly clean). You don’t want it dried out, but it should be fairly set in the center.

    1. The slow cooker pictured in this post is 5qt and as you can see from the photos, the crock is only about 1/2 full. So, you could probably do as small as a 2.5/3 qt for this. Just keep in mind that if the crock pot is more tall/round, it may take longer for it to cook in the center.

  14. I’m going to make this tomorrow for thanksgiving! I wanted to clarify the sour cream amounts though. “8oz 1 cup” is what it says. Is it “8oz aka 1 cup” or is it 2 cups?

  15. Sorry to hear. This recipe does stay a bit wetter in the crock pot than when made in the oven. But it should have been hot throughout and at least somewhat set in the middle (as you can see in the photos). Was your crock pot more circular by chance (so round and deep)?

    Made this for our church potluck and it is so easy to make, throw it all together in the crockpot, and let it cook up. Very tasty and filling. Recipe is a keeper!

  17. I thought I’d reply to a few questions even though they were years ago now.. 🙂 Growing up, we always did a ratio of pretty much 1 of every ingredient. So 1 cup, 1 egg, 1 box, etc. Which leads me to believe that you can be pretty darn flexible based on what you have on hand. And we’ve done it often without cheese, too. I’m not sure you can even deliberately mess this recipe up! LOVE it! 🙂 Thanks for the great pics and instructions, Sara!!

  18. I make corn casserole in the oven at 350 for 1 hour. On mine the cheese is on the top not mixed in. I wonder if I doubled how long it would take to cook on high
    1 can cream style corn
    1 can whole kernel corn
    3 eggs
    4 oz melted butter
    1/2 cup chopped green pepper
    1/2 cup chopped onion
    1 box Jiffy corn muffin mix
    1 cup shredded cheddar cheese
