Creamy Chicken & Artichoke Pasta

I was given the challenge to create a recipe using some of the La Romanella line and decided to do something different than a traditional pasta & “red sauce” meal. So, I made a “white sauce” dish instead!As soon as I saw the La Romanella marinated artichokes, I knew I wanted to include them in something (stay tuned for a delish spinach & artichoke dip soon too). So, I used the creamy italian chicken recipe as a starting point and went from there! 🙂 Here’s what I came up with:

Creamy Chicken & Artichoke Pasta

Ingredients:

1 16oz. package penne pasta

2 chicken breasts (chopped)

1-2 C marinated artichokes (chopped)

1 8oz. package of cream cheese

1 C milk

1 C shredded parmesan cheese

garlic powder & italian seasonings to taste

Directions:

1. Boil pot of water. Cook pasta

2. Already cooked chicken would be great for this recipe and greatly reduce prep time. Otherwise, while pasta cooks, cook chicken. I put olive oil in a pan, and added a bit of chicken stock and garlic powder to the cooking chicken.

3. While chicken cooks/pasta boils, chop marinated artichokes.

4. Chop chicken.

5. Into pan on medium heat, add cooked chicken, cream cheese, milk, and seasonings (I added half a packet of italian salad dressing mix). Stir, allowing cream cheese to melt. Then, stir in artichokes and parmesan cheese. Heat & stir until everything is well-incorporated & creamy!

6. Serve over the cooked pasta and enjoy!
