Easy Cheesy Zucchini Bake

This is such an easy, quick dish to fix! And, now that it’s actually cooled off here (and the thought of heating up the house by turning on the oven doesn’t make me shudder), I’m so excited to start making it again! This cheesy zucchini bake makes for the perfect side or even vegetarian main dish! And, in our house it’s actually known as “Cheesy Kazoonies”! 🙂

Ingredients:

  • 1 jar spaghetti sauce
  • shredded mozzarella (at least 1 C)
  • 4-6 zucchini

Directions:

1. Preheat oven to 350.

2. Slice zucchini into about 1/4 slices.

3. Spray oven safe baking dish (this is about a 2qt. size) with cooking spray. Put down single layer of zucchini slices.
4. Cover the zucchini slices with a layer of sauce (enough to just cover the slices). Then, cover with a layer of shredded cheese.
5. Repeat with a second layer of all ingredients! Then, bake for 20-25 minutes, until cheese is melted/bubbly and zucchini are fork tender.
Then, voila, an easy, yummy dish of cheesy zucchini…or cheesy kazoonies! 🙂

  1. I am so excited to cook this for my husband tomorrow.. it so difficult to make him eat his vegetables. For added nutrients I always add extra LEFTOVER vegetables to the sauce (broccoli, cauliflower, carrots, onions peppers or mushrooms). I puree them up and toss it in the sauce- and he’s none the wiser. Thank you for sharing 🙂

  2. Has anyone ever tried this in a crockpot? I would love to try this for Christmas Eve and cook it while we are at church!

    1. I’ve never tried it in a crockpot (it wouldn’t need very long I don’t think). But, if anyone tries it, I’d love to know if it worked!

          1. I would think that is a good idea with a removable crock so you could put it in the oven to finish off the top just for added effect.

  3. I made this yesterday & I have to say it was delicious! I was a little leery how it would taste since zucchini is somewhat bland & watery, but I added Italian seasoning & garlic powder to each layer, & made a meat sauce adding a 1/2 c. of Ricotta Cheese. You will see a bit of moisture in the dish, but once it cooled, it thickened up a little. My husband even devoured it. Will be making this again in the future. Wonderful recipe! Thank you! 🙂
