I love buffalo chicken anything! I also love taking this flavor and marrying it with something a little bit healthier. So I nixed the bread & flour wraps and used butter lead lettuce instead for a healthier version. I made this meal last week for my family, and my husband loved it!
First up, grill your chicken. I used two chicken breasts, seasoned them with salt and pepper and grilled them on my grill pan. Set them aside to cool and then thinly sliced the chicken.
Toss them in your favorite buffalo sauce, (I used Franks). Next up you’ll want to chop up the fillings for your wraps. I chopped up some carrots, cucumbers, celery and cilantro. You can see below everything was chopped pretty fine except for the celery. I loved using all these fresh ingredients in my wraps.
Save yourself some calories and get rid of the four tortilla you might usually use and opt for lettuce instead. I used butter leaf lettuce.
Take your lettuce and fill it with some chicken and all the toppings. You could also add blue cheese if you like. I opted for this because I am cutting out dairy from my diet but you can do whatever you like.
There’s just enough kick in them, and the crisp lettuce and toppings help keep every bite fresh and moist!
