Buffalo Grilled Chicken Lettuce Wraps

Buffalo Grilled Chicken Lettuce WrapsI love buffalo chicken anything! I also love taking this flavor and marrying it with something a little bit healthier. So I nixed the bread & flour wraps and used butter lead lettuce instead for a healthier version. I made this meal last week for my family, and my husband loved it!

First up, grill your chicken. I used two chicken breasts, seasoned them with salt and pepper and grilled them on my grill pan. Set them aside to cool and then thinly sliced the chicken.

 photo buffalochickenwraps2_zps7c9e2014.jpgToss them in your favorite buffalo sauce, (I used Franks). Next up you’ll want to chop up the fillings for your wraps. I chopped up some carrots, cucumbers, celery and cilantro. You can see below everything was chopped pretty fine except for the celery. I loved using all these fresh ingredients in my wraps.

 photo buffalochickenwraps1_zps0b003e8f.jpgSave yourself some calories and get rid of the four tortilla you might usually use and opt for lettuce instead. I used butter leaf lettuce.

 photo buffalochickenwraps3_zps04aa2071.jpgTake your lettuce and fill it with some chicken and all the toppings. You could also add blue cheese if you like. I opted for this because I am cutting out dairy from my diet but you can do whatever you like.
