Mealtime for families is important – coming together, sharing good food, discussing all kinds of topics. In fact, many research studies show that having family dinners can make a big difference in children’s lives! For many families, Sunday night is a traditional time to come together for a nice meal. But, the cook doesn’t always want to be slaving away in the kitchen all day…and really, who likes washing tons of dishes?   1. I make a dish that my mom’s coworker told her about that’s always easy to make and yummy to eat. I call it chicken casserole and anytime I tell the kids that’s what’s for dinner, they shout, “Yay!” I make 3 cups of rice in the rice pot with chicken broth instead of water. I cook diced chicken breast in a skillet with vegetable oil and season with salt and chili powder. When the rice is done, I mix the rice with a can of condensed chicken soup and a 16 oz container of sour cream. I layer that mixture into a glass baking dish. I layer the cooked chicken on top. Next, I layer a can of Rotel diced tomatoes, usually mild, but sometimes I use the hot. On top of that, I sprinkle it with cheddar cheese. I bake it in the oven at 350 degrees for about 10-15 minutes, just to melt the cheese and warm up the rice. It’s really easy. And SOO yummy. We always have leftovers for the next day.
