Slow Cooker Tropical Pulled Pork Recipe

Taste the flavors of the islands at home with this Slow Cooker Tropical Pulled Pork recipe! We LOVE a tropical escape! Beautiful turquoise waters, incredible islands, interesting cultures, and delicious food – SO good!! We’ve had the incredible pleasure of visiting areas of the Caribbean and Hawaii multiple times. In the Caribbean, we’ve been to Turks & Caicos a couple of times, as well as Eastern Mexico, Grand Cayman, Jamaica, and Belize. In fact, we just returned from sailing around the Caribbean on the Carnival Vista and have an upcoming trip to Hawaii planned! So, I have tropical paradise on the brain and thought I’d share some island flavors with this tasty tropical-inspired recipe! In addition to the delish tropical flavors, the beauty of this recipe is that you can just dump everything in your slow cooker and let it go. Then, there are so many things you can do with the pulled pork! Serve it up on a bed of white rice or serve it up with some Caribbean rice & peas on the side. You could also do Caribbean pulled pork quesadillas, Hawaiian pulled pork sliders, even some tropical nachos! So many options – the key is making sure you have a good tropical sauce/marinade for the pork!

Here’s the tasty recipe:

Slow Cooker Tropical Pulled Pork

Ingredients:

  • 1 Pork shoulder/butt roast, 3 lb
  • 1 tbsp ginger, minced or grated
  • 2 cloves garlic, minced
  • 2 scallions (green onions)
  • dash nutmeg powder
  • ¼ tsp allspice powder
  • ½   tsp Thyme
  • ½ tsp salt
  • pinch (or as desired) dried chili peppers
  • ¼ tsp sugar
  • pineapple juice

Directions:

In a blender, combine  all the above ingredients (except the pork). Begin to blend and add just enough pineapple juice to form a thick paste. Wash and pat dry the roast. Sprinkle some salt and pepper over it and then spread the marinade over the entire roast, wrap in cling film and leave to marinate a minimum of 4-6 hours, or overnight is best. Reserve any leftover marinade. In the morning, prepare the slow cooker by pouring ½ cup of pineapple juice in the bottom (Optional – slice up ½ a red pepper into strips). Remove the plastic wrap from the roast, and place the roast in the slow cooker. Cook on low for 6-7 hours. Once the roast is cooked, use two forks to begin to pull the meat fibers of the roast until the entire roast is pulled apart. 

Like I said before though, what REALLY makes this is the finishing sauce! So, here’s the recipe for that:

Tropical Finishing sauce:
In a saucepan, add 1 can of crushed pineapple, 2 tbsp honey,  a ¼ tsp of liquid smoke (optional), 2 tsp lime juice, 2 tbsp soy sauce, slow cooker juices and reserved marinade.  Bring to a boil and then transfer to the slow cooker with the pork.  Mix well, cover and keep warm to serve. *Note – if you don’t have time or don’t want to bother with this as a finishing sauce, you could just put it all in with the meat at the start.
