Creamy Garlic Parmesan ZoodlesHave you tried zoodles yet? Zucchini noodles are a HUGE hit in our house (even with the kids), so I definitely think it’s worth giving them a shot if you haven’t tried them yet! They’re great to use in place of pasta for a lighter/fresher option (also perfect if you’re eating paleo or gluten-free). And with these creamy parmesan zoodles, you likely won’t even miss the pasta. It’s that good! Creamy White Sauce ZoodlesYUM! Mr. Mom Endeavors even said this basically tastes like a simple fettucine alfredo. So, I’ll take that as a win! Plus, this dish is SO easy to make. You can whip it up in 5 minutes! Eat a big helping for a main dish or you can serve it on the side of some tasty grilled chicken – or even cut up some grilled mixed with the dish! The key is to just have a vegetable slicer that will spiralize your zucchini. I have the Paderno Vegetable Slicer (affiliate) and I LOVE it! The kids love using it too! How to make zoodlesSince you do NOT want to overcook the zucchini zoodles (they just get soggy), it doesn’t take long to saute them up at all! And easy & fresh meal idea – perfect for those busy nights!

Creamy Garlic Parmesan Zoodles

Fresh & easy, these creamy garlic parmesan zoodles are the perfect replacement for a pasta dish.

Ingredients

  • 1 TBSP butter
  • 2 cloves garlic minced
  • 4 oz cream cheese
  • 2-3 TBSP milk
  • 1/4 C Parmesan cheese
  • 4-5 medium zucchini spiralized
  • salt & pepper to taste
  • *optional - sliced cherry tomatoes for garnish

Instructions

  • In a large pan, melt butter over medium low heat. Then add minced garlic.
  • Let the garlic and butter cook together for a minute or so, then add cream cheese and milk.
  • Allow the cream cheese to melt and start forming a simple sauce.
  • Add in all the zucchini noodles. Toss the zoodles to coat with the sauce.
  • Add Parmesan cheese and cook all together, just until the noodles are barely fork tender and all the cheese has melted.
  • Serve immediately and enjoy!

    I don’t usually make zoodles because I’ve never liked them, cooked or raw. But I tried this recipe on a whim and I’m SO glad I did. It was absolutely delicious!

  3. I just made this again for the second time in less than 2 weeks. I’ve made it with one zucchini and one summer squash and with just zucchini. Two squash seems to be perfect for hubby and I….with no leftovers because whatever’s left in the pan hubby goes back for! Thanks for a fast easy low carb recipe that in my head is pasta!

  9. This is SOO GOOD! I didn’t have any milk but I did cook some chicken thighs in my Instant Pot and used the broth from that instead. I then cut up some of the chicken and added it to the Creamy Parmigian Zoodles. It was AWESOME! Thanks for this new dish!

    Just wondering if you have serving size, calorie, fat, protein, carb,etc. information for this recipe? Absolutely delicious and so easy. I’d love to put it on the carb manager app!

  13. This was delicious!!! My whole family couldn’t stop talking about it the entire meal. Last time I made them zoodles I did a pesto sauce and this was a much bigger hit, and a lot less work. Super easy and little clean up. Thanks for the great recipe!!!

    Amazing flavor!!! This is the first, but it won’t be the last time I have this. It is so tasty! I used only 2 zucchini and half the cream cheese, but left all other ingredients as is.

    My spiralizer wouldn’t work on our huge zucchini. My hubby used the mandolin. This recipe is a keeper! My 9 yr old even liked it 🙂
