Easy Peppermint Brownies

So, clearly, we’re on a bit of a mint kick. Dark chocolate mint chip cookies. Peppermint chocolate creme pie. Peppermint hot chocolate cookies. And, now, peppermint brownies!!! It’s all SOOOO good! And, these peppermint brownies are so easy to make!

No fancy recipe. In fact, you can do this with just a boxed brownie mix or use your favorite from scratch recipe. Really, whatever you want. You just need add a couple of things. First up, you need to add 1 cup of chocolate chips (unless of course your mix/recipe already has them). Then, add 1 cup of the Andes peppermint crunch baking chips. If you don’t have those, then crush up a few candy canes and add those instead. Bake as usual.

While the brownies bake, take two candy canes & crush them up into fairly fine pow­der. I just put the candy canes in a baggie & smash them up! 🙂 Then, as soon as the brownies come out of the oven, sprin­kle the crushed candy cane all over the top. The heat from the brownies will melt the candy cane bits just a bit, so you’ll have a little bit sticky/little bit crunchy topping.

Once cool, cut, serve, & enjoy! These are SO good and an easy way to make a regular ‘ole recipe a little more festive for Christmas! Enjoy!!!
