Easy Peppermint Brownies

So, clearly, we’re on a bit of a mint kick. Dark choco­late mint chip cook­ies. Pep­per­mint choco­late creme pie. Pep­per­mint hot choco­late cook­ies. And, now, pep­per­mint brown­ies!!! It’s all SOOOO good! And, these pep­per­mint brown­ies are so easy to make!

No fancy recipe. In fact, you can do this with just a boxed brownie mix or use your favorite from scratch recipe. Really, what­ever you want. You just need add a cou­ple of things. First up, you need to add 1 cup of choco­late chips (unless of course your mix/recipe already has them). Then, add 1 cup of the Andes pep­per­mint crunch bak­ing chips. If you don’t have those, then crush up a few candy canes and add those instead. Bake as usual.

While the brown­ies bake, take two candy canes & crush them up into fairly fine pow­der. I just put the candy canes in a bag­gie & smash them up! :) Then, as soon as the brown­ies come out of the oven, sprin­kle the crushed candy cane all over the top. The heat from the brown­ies will melt the candy cane bits just a bit, so you’ll have a lit­tle bit sticky/little bit crunchy topping.

Once cool, cut, serve, & enjoy! These are SO good and an easy way to make a reg­u­lar ‘ole recipe a lit­tle more fes­tive for Christ­mas! Enjoy!!!
