Halloween lunch with ghost sandwiches!

I love making fun lunches for the boys, but hadn’t made one in a while! With Halloween right around the corner, I thought a frightfully fun lunch was appropriate. I wanted to make ghost sandwiches, but you can’t make those with whole wheat bread! It had to be white bread and I was pleased to find a great option in the new white bread from our sponsor, Wonder bread Smartwhite for Kids! It’s baked with no high fructose corn syrup and is only 50 calories per slice. Plus, it’s fortified with the fiber of 100% whole wheat bread and contains the calcium of an 8-ounce glass of milk. So, I was thrilled that I could make white ghost sandwiches that are fun and healthy! Whether you serve it up at home or send it in a lunchbox, a Halloween lunch will definitely be a hit with the kids!

Ghost Sandwiches

– Prepare your kids’ favorite sandwich using Wonder bread Smartwhite for Kids. I made turkey and provolone, which was perfect for the ghosts as it kept everything fairly white.

– Cut out ghosts from the sandwich(es). A ghost cookie cutter would work great for this, but I didn’t have one. With a knife, I just free-handed two ghosts out of one whole sandwich. Then, I used cut black olives to create a face on the front of the bread. For the rest of the lunch, I used various orange & black foods. A Halloween lunch didn’t feel complete without pumpkins, so I made cheese jack o’ lanterns. Using my pumpkin cookie cutter, I cut some shapes out of a cheese slice. Then, I carved out a jack ‘o lantern face. You could just leave it, but I decided to make it black by stuffing cut black olives into the openings I had carved out. To complete our Halloween-themed lunch, carrots & black olives were perfect for veggie sides. We also had some dried papaya that I cut slices of for more great orange color. The boys loved it!!!
