Welcome to week 3 of the 2012 College Football Saturday Tailgate Party! Last week I shared a football craft (an easy DIY team spirit wreath), so this week I’m changing it up with a super tasty sliders recipe. Our Huskers play at 9:00am here (in AZ) sometimes during the season, so we need to do some sort of breakfast tailgating food for those games.  And, what sounds more perfect than some delicious ham, egg, and cheese breakfast sliders?! gameday-breakfast-slidersYUM! Perfect for morning games! These sliders are easy to make, super tasty, and definitely more filling than something like donuts! You can even make them up the night before if you’d like. But, they don’t take long to make at all (20 minutes or less) in the morning. The sauce on top really makes these SO extra good – once they start cooling, the tops of the rolls are just perfection! Gameday Breakfast Sliders

These breakfast sliders are a crowd favorite!

Ingredients

  • 1 pkg 12 count Hawaiian Rolls
  • 8 - 10 eggs depending on egg size & how "eggy" you want your sliders
  • 6 large slices provolone cheese thin slices
  • sliced ham at least 6 large, thin slices
  • 1/4 Cup butter melted
  • 1 Tbsp yellow mustard
  • 1 Tbsp brown sugar

Instructions

  • Scramble up your eggs however you like to do them.
  • While the eggs scramble, cut the entire package of rolls in half (so you have a sheet of the tops & the bottoms).
  • Place the bottom sheet of rolls in a pan and top with a thin layer of provolone cheese (I used about two large slices).
  • Once the eggs are done, cover the cheese layer with the eggs. Then, lay ham slices over the eggs. If your provolone is nice & thin, then you can add two more slices over the eggs and then again over the ham.
  • Place the top sheet of rolls over the ham.
  • At this point, either cover and store in frridge/freezer for future use or continue on to finish making...
  • In a small bowl, combine melted butter, mustard & brown sugar. Stir until well combined (and the sugar is at least mostly dissolved). Then coat the tops of the rolls with the mixture. (I like to use a little pastry brush to make sure I get the tops evenly and a little on the sides).
  • Bake at 350 for about 10-15 minutes (until cheese gets nice & melty).
  • Remove from oven and let cool a few minutes. Then cut, serve, and enjoy!

      I made this for friends over Oktoberfest weekend. They were such a hit- not too sweet. I made the recipe exactly as stated. I used all the cheese you suggested- amazing. I ended up making more of the mustard sauce because that sauce was to die for!! Thanks for an easy , delicious recipe!!!

  1. Would like to make night before game and put on grill to warm up. Do you think that will work? I have to travel to the game so it’s hard to make same day.

  2. These look great! Do you think they’d be portable enough to do on a grill (or at least reheat)? I’m going to be feeding student athletes in a tailgate situation and these might fit the bill as far as protein requirements from the coach.

    1. Hi Kimberly! I haven’t tried it, but I bet it could work! I’d still make them in the disposable aluminum pans and just put the pans right on the grill. I don’t see why it wouldn’t work to reheat them! 🙂 Good luck! Let me know how it turns out!

      No, hasn’t been an issue. Though I do try to make sure that I don’t over-cook the eggs in the pan! 🙂

  3. Was wondering if I made these ahead of time could I freeze them and then reheat in an oven or grill later. If so would you freeze after adding the butter mixture or after cooking. Even if you haven’t actually done this what would you think based on having made them before. Thanks for any help. Hoping to put some easy freezer meals and snacks together before school starts.

    1. Hi Kate,
      I haven’t tried freezing them, but I’m sure it would work. I’d just wait to put the butter mixture on later (to avoid any extra potential for sogginess).

    1. Absolutely! You’d just want to make sure it’s already cooked. Something like already cooked bacon or sausage patties – or other kinds of deli meats! Yum!

  4. I tried something different for our Annual Christmas Potluck at work. These were a huge success. I used combination of Ham, Sausage, provolone and cheddar cheese. I also brushed the rolls with melted butter. I had my husband try one without the glaze. He told me to add the glaze. Huge Huge success.

    These were delicious! Made them for brunch and they were gobbled up w/in minutes. I don’t even like ham and ate several. We made a cheddar/egg/bacon variation that was also a hit. Definitely making these again!

    1. For some of the people asking about “reheating”: We reheated a batch after moving to another location and the tops burnt because of the glaze. So we had to cut off the tops. They weren’t pretty at that point but still delicious… actually even better. So watch very carefully if you re-heat.

    Made the breakfast ham, egg and cheese sliders! My husband and son ate them all!! Super delicious. (I did not use the mustard, brown sugar glaze – allergies)

    Made these for company over Thanksgiving weekend. I choose Mild Cheddar instead of Provolone. I like the make ahead ability of the recipe. We had them all ready and when company arrived, put them in the oven to warm and melt the cheese. We had used a Blackforest Ham which tends to have a sweeter taste. In the future we would probably choose a ham that is smokey as the rolls are already sweet. More effort, but a couple of slices of cooked bacon would be an excellent substitution for ham. We will definitely make these again.

    I made these for a Breakfast for Dinner one night. I love the glaze over the top of them. These sliders are so yummy, and incredibly easy to make. It’s perfect served with some fresh fruit as a side.

    Absolutely delicious, and couldn’t be easier! I used cooked sausage patties and American cheese. Just butter for the top. Loved the sweetness of the buns against the savory ingredients! Will make again for sure!

    How big should the rolls be? I bought a dozen Hawaiian Dinner Rolls – and they look too small. One measures about 2.5″x2.25″. ?

  17. So yummy. Made them in casserole pan and bottom got soggy. Next time in foil or metal pan. Heated them up on foil and leftovers were also perfect. Even my mom was impressed
